How to cook Coq Au Vin

  • One of the most famous recipes in French cooking, I first learned how to make Coq Au Vin as an apprentice chef. It uses quite a lot of wine, and should be started the day before so you can leave it to marinate over night, but it tastes sublime!
    INGREDIENTS
    • 1.5 litres red wine
    • 1 carrot
    • 1 onion
    • 1 stalk celery
    • 3 cloves garlic
    • 3 sprigs thyme
    • 1 bay leaf
    • 6 chicken marylands - leg and thigh
    • 40 ml olive oil
    • 40 g butter
    • 12 pearl onions
    • 200 g speck or bacon, cut into 1 cm lardons
    • 500 g button mushrooms
    • 100 ml brandy or cognac
    • 2 Tbsp plain flour
    • 3 sprigs thyme
    • 2 bay leaves

    Sometimes when marinating the chicken overnight in red wine-it won't take on the dark wine color...is this due to the fat in the skin (some legs being fattier than others) or the kind of wine? Could it be too much chicken and not enough wine? I use a pinot noir, cote du rhone or a bordeaux usually....

    I made bordelaise sauce with beef another after your video. I am gonna make this too tmr as I still have got shiraze at home. Haha better to go and buy some chicken drumstick!

    C'est TROP facile! Je n'avais pas de cognac, alors j'ai utilisé Bénédictine à la place. Délicieux! Merci beaucoup pour cette recette!

    Just like grandma made, but he forgot the last step. Leave it overnight in the refrigerator and reheat the next day.

    Are the vegetables in the marinade necessary at all? I would think the thickly cut veggies would be completely overpowered by the wine anyway and wouldn't impart any flavor to the chicken.

    Basically you replace the beef in beef bourguignon with chicken to make it coq au vin?

    chef¬I saw the fur of the chicken. It has to be cleaned before!

      chicken fur has protein in it and is eaten eagerly by the hens ! So how can it be gross?
