Apparently how calm he is is relative the what show hes doing\country its screening in (or rather made for). Basically when he going off at people constantly its for America, when hes halfway between drama and this its for UK\Europe, and here hes clearly just teaching so hes fully professional and to the point. Long story short - this man is not only a chef but an actor, hes good at what he does, but hes not above playing the crowd for the view count.
And the network and production staff have a lot of influence as well. It's a shame that we in the US crave melodramatics, so his US version of Kitchen Nightmares are so formulaic, it's tiresome to watch. In the original UK versions, you could tell that he was actually trying to help but had to break through the bad habits and particularly the egos of those at the restaurants (who'd asked him to come help), to break them down in order to build them back up. This was made plain in one UK episode with a restaurant in Paris operated by a spoiled young British woman using her parents money. She'd hired a young college student to be her lead cook, and Gordon saw the talent & potential in the cook while he taught her dishes to make for the restaurant, but had to argue with the owner over everything. The owner couldn't handle the pressure so she ended up closing the place and running home, leaving all the employees high and dry. Gordon showed up to keep filming to find the cook sitting on the front steps with nowhere to go. He ended up hiring her for one of his restaurants back in England. Throughout the episode, you could see his nurturing side because she was just soaking up everything he could teach her. There were many other episodes like that, where you knew he cared, but had to snap the owners or lead chefs or cooks out of their ruts. The American version is just drama for the sake of drama, or contrived plots -- like all of Bar Rescue.
I just love to watch craftsmanship unfold before me. Especially when the person performing actually takes time to explain their techniques and what they are doing. Don't care if it's cooking, engineering, carpentry or hairdressing. When someone has dedicated their life to getting good at something and spent countless hours overcoming hurdles, learned their craft and developed techniques to do their jobs as cleanly and efficiently as possible, it just really shows no matter what their craft is. There's something about that passion, dedication and discipline that commands such respect and is just inspiring to watch. Having the opportunity to be taught by someone like that should not be taken lightly because if you're attentive you can learn more from them in a day than you would in a year on your own. It really is a beautiful thing.

Imagine how many failed Salmon, Lobster and chicken dissecting must Chef Ramsey get berated, scolded and thrown away until he could cut them all with impeccable precision and impressive agility.
I mean no way you wouldnt study cutting/dissecting precious salmon and lobster beforehand. But yeah the amount of time he put into preperation and research on how to cut em effectively is enormous.
He didn't become a chef overnight. He had to do it for the first time and fuck it up many times after that. To learn is to make mistakes. To make mistakes is human.
@@ywlan Its so so different to study it and actually doing it, you can have that knowledge but once you are in front of a whole fish for the first time, you get very nervous, the books dont prepare you for the many many variables .5 fish in and your fear dissipates, 25 fish in you star gaining a little confidence.

Than six months vegetable cleaning only and prep for cutting which I was allowed to "learn" the following six months! By now I am 1 1/2 year in apprentice,hence, halftime before diploma. The following 1 1/2 year I learned all the cooking techniques to near perfection. The real challenge started with my first work relation as a Chef,because I realized, that I knew the basic only. It takes ears to become a master Chef. Good luck with your one night study. :-D NB: By now I am 69 and still love cooking and studied several other subjects and finished them with either Federal Diploma,MBA and Ph.D. It is worth to invest in your own education, both TIME and money.

It also takes practice I have the questionable Fortune 2 have spent time actually filleting fish and not little ones either no my father and I like to go fishing in this whole we know about where we pull out some absolutely huge trout to the point they could be salmon at least in size and it is beautiful almost red meat but the first time we all got together and started filleting them none of us knew what the fuck we were doing we knew a little bit but as far as actually doing the knife work went it was messy
