    Mrs Lori..my wife when she was young was taught by a native American how to freeze corn on the cob...cut the stalk end off but not show corn do the same on the other end ..don't shuck only the outer layer but keep enough green...put in freezer bag and freeze... when you steam or cook it..it taste like fresh corn...I was amazed

      we have done it like that a lot but we use it a lot in different things so it is ready to use when you are ready and we need the freezer space thank's for stopping by

    We enjoy when you "run your mouth", as you say. Its like listening to a dear friend.
    I would love to have the room to get all the things you have...the pressure cooker, the jars, the potato cutter. I live vicariously through you. Its so gratifying to see Gods bounty treated with respect and not wasted, and cooked and eaten with gratitude for the Creator. Thank you for the video Ms. Lori.

      I wish I had known this french fry canning recipe and many others the yr we were privileged to get a bounty of potatoes and other things. Such a produce saver and money saver.

    When packing your jars Tip: fill about 1/2 full then turn on side and shake it.. It will line up the fries, so when you tip it back the fries are standing up. Do this until full, with sliding in the last one. To keep them in place you can put the jar in a large bowl, tip the jar to the side and fill at an angle. Just pick the right bowl. Thank you Miss Lori. You never know when you need this. I was at a farmers market and bought 100 lbs of russets for 20.00. Yep I canned potatoes.

    Hi Ms. Lori- my best to you & Mr. Brown.
    I’m born & raised in California. Mama came from OK and Daddy was raised in the hills above where our town is-about an hour away.
    When Daddy was still alive we had a huge garden every year. Everything you could think of. It was at least a half acre of hand dug rows and irrigation. It seems like back then we didn’t have the droughts that we do now…we’re in one now and that dry wind stirring up dust is terrible. We don’t have that property anymore and Daddy is in Heaven. We get most of our produce from the roadside stand but this year there is slim pickins’. I feel for the owners of the roadside stand ‘cuz I know that’s how they make their living.
    Along w/the drought comes those terrible fires.
    I’m extremely grateful for what we do have and I pray for those who are less fortunate.

    Miss Lori I use a rubber band between two fingers to get the silk off the cob.
    Just stretch the rubber band between your fingers and go up and down the cob. It works and is quick

    mama and I would cut potatoes in long quarters, put them raw in a jar and can them, then in the winter after rinsed and dried we would flour them and fry and you have what we call in Arkansas tator logs...

    Ms Lorie, I am a beginner canner, my grandmother used to can every year, but I never paid much attention to how she did things. She passed away in 2012 and I sure wish I had paid much more attention. Watching your videos remind me so much if her! She as well was from Arkansas, you sound so much like her! Thank you for making these videos. Please know that you are blessing to so many people!

    Lori, you can scrape cob after you cut it off the cobb. Take cobs in 1/2 sheet pan and roast cobs till good and brown, not burnt at 400 F. Place cobs on large pot, cover with water, add onions, carrots, celery. Make corn stock.

      Yes! This year I'm scraping the corn then dehydrating it, make into powder to add to stuffing or make a quick creme corn.

      Stock is a good idea. I always scrape the cobb. Why waste what's in it?! A rancher lady taught me a way to freeze corn that tastes like fresh corn. Remove from cobb by your preferred method. I love my Pampered Chef tool. It's amazing how easy it cuts it off. (I scrape. The rancher never said anything about that). You put the corn in a caserole dish, add butter and creme or half and half. I substituted original recipe of creme to half and half. Bake (I do at 350°) for an hour. It absorbs all the butter and half and half. I no longer have exact amounts as been so many years. I just estimate. Don't drown it but I'd say 1/2-1 cup. After an hour remove, cool enough to handle, put in your storage choice (I use FoodSaver bags) and freeze. Delish.
      I heard it is not approved to can with peeling on - too big a chance to get wrong bacteria in it. I read somewhere that Russet were not good for canning. Opinion?

      I do this with my leftover cobs too. Good base to start creamed corn or corn chowder

    Just made potato soup from a pint of canned potatoes. Add a cup of milk, a sprinkle of herbs and dried onions and a pat of butter. Yummy. Better than store bought canned soup. These french fry cut potatoes would work for that. Thank you for the instructions.

      Try sprinkling a couple of tbsp. of corn meal also in your soup for a different taste. My mom did this to thicken the soup and I’ve adapted it also. Homemade potato soup is just so filling and yummy. Hope you like the taste of the added ingredient,to your milk, butter, and seasonings.

    Please, bring us along for your later garden planting. The are other homesteaders that use a light weight light colored fabric over their gardens. Greenhouse and else wise, too. When making corn chowder, take the cobs and boil them for an hour and use that stock to make the chowder with.

    I actually like the “Willy-hilly” look of these fries. Time is precious too, so willy-nilly is good as gold in these circumstances.

    I so enjoy all your videos. I'm 71yrs old and have never pressure cooked. I have a presto cooker. You are inspiring me to can. I'm going to try the dry beans and also the French fries. I've had some health challenges and I feel like I'm going to be getting better. When I can I will try. Love you Ms Lori. I feel like you're a friend. My husband and I really enjoy you and Mr Brown sooo much. ❤🌻

      I buy potatoes peel, cut and can them. I was buying canned potatoes to make quick potato salad but I tried canning them myself. I opened a can from the store to see how they compare to home canned and I swear there's something wrong with the store bought one. The flies wouldn't land on them! Not that I want flies to land on my food, but don't you think it's odd? I paid 6.57 for 10 pounds peel them carefully and you can get 7 jars (each qt jar holds 4 cups of diced potatoes) I figure the home canned potatoes cost me .93 each quart for the potatoes. I tired blanching the potatoes to keep the starch away but that didn't help my jars are congealed but I just rinsed it off and made potato salad. I hope you try your hand at canning.

    Miss Lori I’m sad to hear you say you are having a hard time time with your garden. I take hope in hearing someone with as much knowledge as you and Mr. Brown have are having problems too. Lots of times you see these productive gardens on RUclips and I think what in the world have I done wrong this year? No rain here in North Texas, close to Oklahoma border. 109 heat index. Then the grasshoppers went crazy. I lost my beans and tomatoes. My squash, cantaloupe and watermelon along with my jalapeños are doing well. (knock wood). I’m also doing a big fall garden to try and makeup for summer. Pray for rain.

    Soak your potatoes in water using the powder citric acid that you use for canning tomato's, 2 tablespoons to a large bowl of water for an hour before you dry can your potatoes, they'll stay white and nice to look at until your ready to use them. Also works really well if you want to dehydrate potatoes, it's cheaper than lemon juice and never fails.

    Home canned fries are the best!! Many gardens here in SC have already been plowed under due to lack of rain & extreme heat at the wrong time. I got 1 meal from my green beans & that was it. My tomatoes didn`t do good at all..so I`ll go ahead & buy some to can.
    Looks like my peppers, & onions are gonna be fine & okra is looking good so far. Getting a nice lot of cucumbers. My Malabar spinach is really looking good..it loves the hot weather and lots of water. Kinda like cukes. Not looking forward to getting my water bill this month tho lol
    I love freezer corn. I put 55 ears in freezer last week. I`d still like to get some to cut off. I canned it one time & said never again..did not like it at all! My tip for using the food saver when puttin up corn..I go ahead & put my cut corn in inexpensive plastic zip bags... then put the bag in the Food Saver bag. No liquid to worry about getting in your machine and...you can re-use the bag for something else cause all the mess is inside the cheapy bag! :)

    Thank you for saying you don't over burden yourself canning! My husband's family is Morman and they all keep a years worth of stores in their homes. When ever I helped my Mother-in-law would start real early and we would can all day! Cases worth of everything. Thank goodness they were really good on rotation with their inventory!

    I just love listening to you. My mom had a friend who was from Arkansas and she was just the sweetest loving person I've ever met. I just loved listening to her stories about where she was from and her childhood.

    Sorry about the drought. Although this year has been decent , last year we had the drought. It's no fun at all when we are counting on our own food. Everyone around us have had huge golf ball size hail..God has kept us safe so far. Hang in there..luv u both

    I think I’ll get one of those fry cutters and can up some potatoes for my Daddy. He loves fried potatoes, but can’t make them most of the time because of his arthritic hands. Such an awesome idea! Thank you Ms. Lori!!

    I'm in NE Texas and we're in a drought too. Every time there is rain coming and we think we're going to get some, it splits like the Red Sea and goes above us and below us. We haven't had any rain for several weeks. I'm trying so hard to save my garden. I've been watering every other day with a drip line and I let it run for 2 hrs at the least. Unfortunately, I'm not on a well, oh how I wish I was, we're on rural water which is basically city water with lots of chlorine so I bought a filter this year to use outside, but what I was getting at is my water bill which is normally $35 a month was $110 for the month of June. Not sure how long I can keep that up, but it just kills me to think I would lose my whole garden if I don't water. Our temp is 100 to 103 but of course the humidity makes it feel much hotter. I worry about my chickens and rabbits. All I can do is pray and I do lots of that. Praying we all get some rain and relief from the heat. Nothing compares to water from heaven. God Bless!

    I do the same with corn, except we soak in husks, grill and then when cold, husk, cut and freeze. So good cooked in butter in the skillet.

    We’re 106 degrees inTucson today. Also in a drought. My garden looks sad. Hope my fall garden will do better. Keep cool. Blessings!

      You guys usually get the rain before we do down here in Sierra Vista but this year we are getting it first. Praying you get some of what we've had soon! I did have to replant my garden when the rain came. At least our growing season is long!

    West Texas. So dry as well. Abilene has had 42 days of 100 degree weather with 109 being the highest. I can’t keep anything green. 🥺

    It's super dry in OKC too Ms. Lori. We had some isolated storms last eve; keep praying. It works😇. We didn't get much, but every little bit helps. Please take us along when you begin to prepare your soil, and sow your fall garden. I would like some help in trying my first fall attempt. Your information is always so helpful.     From a food storage standpoint potatoes are a much more valuable crop than beans. You must be happy that your potatoes did well❤️

      I went to try it .. wasn’t strong enough to push it down and I’m not a weak person - ugggh. Didn’t work for me

    I put a thick rubberband on a cob of corn and slide it down to get silky strands off it. Works pretty good!

    An easy way to get the silk off the corn is to put on a pair of clean kitchen gloves and work the silk off. Don't apologize for "talking" - you are a wealth of life experience and wisdom. I appreciate all of the tips. Thanks for sharing 🙂.

      I used to live in Ohio, surrounded by farms and Mennonite produce stands. They had such beautiful vegetables and fruits, not to mention baked goods..... that's one thing I miss since I moved South.

    I live in Georgia and we have had rain here in the north part of the state. Even so I have already replanted squash, beans, corn, okra, cucumbers and tomatoes. I will have a fall garden too! Praying y'all get rain soon!

    What you said about there is no guarantee that you will have a garden each year is so true. I injured my neck last April and all my seedlings died in my garden because of my inability to water and weed my garden. It broke my heart.
    Yesterday (here in lower Michigan) I was able to pick my 1st zucchini of the year and I did a little dance.

    Hello from KY love you and your channel and your family ❤️.Girl we finally got rain this week 2 days worth.I prayed every night for rain.The critters loved it .My son just finished grass seed on the pasture.The minute he got finished it came a great gentle rain from the Lord.it has rained ,2 days and the creek has water in it again.I got teary eyed.We needed the water so bad.💕

    North Alabama is where we are and we definitely are in a drought. And even with watering, just the heat itself is burning things up. This is our first garden and it’s just burning up. We are getting a few things and I am thankful. I just feel with the prices and shortages, I need to do all I can to preserve what I have. Thank you for all of your videos. I enjoy seeing each one! Tell Mr. Brown I enjoyed the dancing on the video celebrating your milestone of followers!

    I am in the hills of North Mississippi and we are in the same blistering heat!
    Gardens are drying up here also for the lack of water!
    When I was a kid I helped my grandmother can a lot of stuff and didn’t think much about it because it was something we always did in the summer!
    We also had a big orchard and from May till frost we had some kind of peaches 🍑 coming in and pears 🍐 and apples so their was always something to put up beside our regular garden vegetables.
    You make me think of my grandmother and the way she did stuff!
    I’m retired now and I started back canning to put good food foamy kids, grandkids, friends and neighbors!
    My grandkids are so spoiled to my jams I put up they just about won’t eat it if it doesn’t have Poppa’s jam on it!
    I hope we can all survive through all we are having to go through nowadays!
    At least I can try and have some stuff put up for the family!
    Love all of your videos and recipes and tell Mr. Brown it is really bad when it’s too hot to fish!

    Hi Mrs. Lori. I live in Missouri, my garden was put in late because of all the rain in the spring, end of May. Now we have not had rain for I can't remember when it has been so long. I have to water every other day. Maybe we will get some home-grown vegies. A little is better than none, we will take what I get, it will taste better than store bought. Then we will prayer for better next year. You and Mr. Brown have a very blessed and awesome week. Thanks for the canning French fry video, didn't know you could can French fries.

    Hope our spuds grow good this summer so I can do this..never thought French fry style! Just pulled 5 chickens from freezer that we had butchered last year and put up 7 quarts of chicken with broth and 7 pints of broth today. Garden is looking decent..xoxo

    My grandparents taught me to just cut off the corn, no boiling, put in bag and freeze. Easy peasy and tastes fresh later.
    I've never done French fries. I'm going to try it. Thank you. Love your videos.

    Thanks, Lori. We buy Silver queen corn in late summer and I will be using this same method. Loved the tip about stopping the liquid before it reaches the seal. Love to both you and Mr. Brown.😘

    Ms. Lori, I swear you were raised by my grandmother because we do so many things the same way!!! I always can potatoes because they're so versatile. Like yours as fries, or you can cut them again and make hasbrowns or like you said, mash them. They don't taste the same as fresh when you mash them but it's better than NO mashed potatoes!!!🤣 And when the gravy is good, it doesn't even matter! Only homemade gravy. Packaged gravy is nasty! Love watching you and Mr. Brown! Keep it up!!! Love you guys!❤

    Yes! I'm all about the fall garden!
    I have to tell you, I did a dumb thing recently. Checking my jars for chips, I ran my finger around the rim. Well, I found one and ended up slicing my finger! Now i just look with my eyes! 😄. I was more upset with having to toss that jar, than cutting myself!🤣🤣

    Here in Northern CA it is always dry in the summer. But now with the heat and so little rain from last winter, we are hurting. And you are right about needing more fertilizer because of the extra watering. I can hardly wait to plant my winter garden. At least it won't be so hot. Thank you so much for taking the time to share. I'm 71 and just now learning about canning, dehydrating, growing. I Love It! And I love your kitchen. Wonderful and homey 🥰

    Mrs Lori do you have a video showing how to cook the French fries after they are canned. Do you just drain, rinse and deep fry them? I would love to see a video when you plant your fall garden! We've been watering everyday too but ours is just about burnt up! I lost my cucumbers to aphids! This was the first year I ever had them. I'm gonna keep trying!!! Thankful our potatoes did really good this year too!

    Ms. Lori, I live in Northern Utah and we have been in an extreme drought for the last two years. We are only allowed to water our yard and Garden once a week. We have had triple digits and high 90's for several weeks now and we are hoping a praying for the monsoons to be very active. Our little garden is just getting going we just harvested our first zuchinni's and in a week or two our tomatoes will be ready to pick. Our farmers only planted half the crops they normally do and we don't know if there is going to be enough water to get them to harvest. The wild fires are started to rage again and we have to use water from our resevoires to fight them. My husband is a firefighter and the last few years here in the west have been extremely dry and extremely hot. We have wind and heat advisories quite often. I am praying this will be our last extreme year of drought. The monsoon usually gets us through and our fall is usually wetter and then winter brings a lot of snow. We are praying it happens this year,

    I take my canned potatoes and drain them then put corn/arrow root starch in to coat them then fry them up. The corn starch keeps them very crisp. Here in Central Washington we have had record rains and the heat is around 75 to 80. We should get into the 90's next week. My tomatoes have just started to bloom and I had to replanted water melons, cantaloupe, and cucumbers 3 times.

    I love going in to Heard's when I am heading to Jonesboro, they are always so friendly and I love all the old Antiques they hang inside.
    I met the family just below them that used to run the Portia Grocery store some years back. They named the town after their daughter who had Cornelia DeLange Syndrome. That is what my son has as well. Good people around that area.
    Our gardens' are struggling heavily here too Miss Lori. Fortunately I have some green beans, which I was breaking while watching this video LOL.
    I took a bad fall a few days ago and now I am stuck using a stupid walker for awhile. Not a good time to be down physically, but we do not always get to make that decision. Have a Bless Day and thank you again for a wonderful video.

    We are baking in NE Kansas too. We had one good rain, but it was already so dry all the water ran off instead soaking in. Had high hopes for last night, but like usual it came within 25 miles and hit that wall and bounced off to the north. Every time it has missed us, but people outside the bubble get soaked. I noticed the river was up yesterday so they had to open the dam to let out the northern states heavy rain.

    Miss Lori, if you want to get them in there all "purty" and standing on end, lay the jar down on it's side. The fries (or green beans, or asparagus) won't fall over, and you can stack them in there easily as loosely or as tightly as you want them

    Here in NW Oklahoma we got our first rain in three months 3 days ago. We are predicted to have THREE days of possible rain. Praying that comes true! The garden is poor. We water with well water but it has just been too hot we think. Zinnias are doing well but have seen only a very few bees.     I am so glad to hear I am not the only one having garden issues this year, I was afraid it was my dirt or that I got such a late start. I been thinking it was the heat and lack of rain here in Alabama so I am gonna hold on to that thought! Things are alive but the growing is slow so far I have only been able to put up herbs but hey better than nothing!! I have to water every day and I am scared for the bill

    Yes! Wash your watermelons also. People have committed that I was strange to wash my melons. I wash top of cans from the grocery. I’ve also been known to rinse my ice cubes before I pour my tea over them.

    My sister and I froze a bunch a couple of years ago and it turned out great. We vacuum sealed it also ❤️. I think I like it better than canned.

      Here the power goes out often (weekly!) so canning etc are safer preservation methods. Otherwise I loved freezing.

    I live in upper East TN, Jellico. We have been in drought as well. It just broke a couple of days ago. We have been watering just like you from our collected rain water. You are correct, the garden is struggling. It is all you can do just to keep the plants alive. We also hope for a better fall garden. Blessings to you and Mr Brown.

    I’m in central Texas and my garden is struggling. I’m so disappointed in my tomatoes. It’s been 100°+ degrees every day and this weekend it’s going to be 106 and 107. You’re right- you just can’t water it enough. I’m very interested in seeing your starts for your fall garden and when you plant. I’m in zone 8b but you’re further north.
    By the way, one of my cats enjoyed watching you run the vacuum sealer. Me, too! 😂❤️

    In North Texas struggling with a drought and mid-100’s. Dangerous heat. My little raised bed garden hasn’t produced one tomato. I got onions, cucumbers, a few jalapeños and bell peppers. Feel like such a waste of money at this point. I appreciate what you say about don’t give up. Hoping for a good crop of fall tomatoes.

      I live in eastern Nebraska and the sun fried my pea and bean plants. My carrots and turnips are doing ok in my raised bed garden. I planted potatoes in a refrigerator cardboard box and they did great. My tomato plant on my deck has only 1 tomato on it and the plant isnt as big as years past. I think it has to do with no bees. I always had tomatoes in past years but this year is bad. I may do a late summer plant to see if I can get something going.

    When I tried to can without water, I used citric acid in the last soak. Worked well so far.

    One of our all time favorites is pickled corn. Omgosh it’s so so good. We usually can about 10 dozen quarts and it lasts a few years or so maybe three. But we do love our corn. 💗✝️💗.
