Hi, for the rust on your jointer, it's the moisture from the wood like you mentioned. Don't use a sander on it, that could be too rough / much and may make the tables uneven. Use fine steel wool and hand remove it. Then put on some paste wax (bee's wax + some oil like linseed or tung oil) to protect the surface and make wood glide better over it.
