I discovered your channel last week and was going to recommend Central in Peru even though Michelin often neglects South America, and then I saw that you were visiting them! Central is a celebration of Peruvian techniques and ingredients, they even have their own research team to find new ingredients in our country, I'm eagerly waiting for your video on them.
@@Salafessien, I just ate at Central a few weeks ago- very interesting mission and enjoyed a few of the dishes so will be interested to hear Alexander’s review. Regarding the Michelin Guide, I also have oftentimes said that it is shameful that Latin American countries/cities don’t have guides, but learned recently that their expansion (to Rio and São Paulo for example) was the result of the tourism board there paying the company to start making a guide.

I'm so glad you did L'Assiette Champenoise (i was waiting for it !), where I had the privilege to eat last summer (best gift ever for my birthday by my wife). We ate at the marble table. It was the first and only michelin star restaurant I did ; so I totally agree with the feeling of having being hit by a freight train with the starter ! It was our favorite dish of the whole menu. I think the pollen might have a lot to do with this unique and unusual flavor... Unless they have change the recipe, I don't think it's lemongrass with the beetroot, but lovage (livèche, in french), the ancestor of celery (or maybe there is both). I never tasted lovage before, and I loved it, the balance with the beetroot was amazing. The service was near perfect for us, except one unfortunate joke by a service member (when I was in the restroom he told my wife he hoped I would come back and not run away without paying). Some lack of elegance indeed, but it was an isolated mistake. Everything else was incredible (I took the wine pairing but it wasn't the same wines as yours, personnaly I had nothing to complain about from the start to finish). L'Assiette Champenoise has got for 2023 the 2nd best note for the best restaurants in the world by La Liste. They also won the special prize "Ethical and Environnemental Responsability" ; every organic waste is reused as fertilizer for their vegetable garden (after dehydration). I'm not a die-hard environmentalist by any mean but I find it pretty cool and full of common sense. It's a pleasure to watch your videos, your commentary is a really good balance with enjoyment and respectful review. (sorry if my english is not perfect)
I agree with you Alexander about making a human connection with restaurant staff. No matter how good the food, if the staff are not happy or communicating well with the guest the experience will suffer.

tbh, 500 euros for all the food, experience, service, ambience and history is a steal. the food represents the history, creativity and knowledge of the chef and the restaurant - transcending the actual food itself. Edible ART!
I'm subscribed to a countless number of channels here, but this is a first one where I've actually watched all the videos start to finish, and subscribed with a notification for a new one. I also love that this video is slightly longer than previous ones, I think around 10 minute mark is ideal.

Alexander, thank you for this level of quality in your videos. My wife and I used to travel more before we had children and before Covid hit my business hard. These videos give me a sense of travel and adventure. It’s a touch of living vicariously but more so it helps remind me of why I continue to work hard to get back to being able to travel and eat at wonderful places like you share. I stayed here in April 2022. The hotel’s design is wonderful 20th century modernism, and the restaurant was sublime. Reims is a worthy destination in its own right.
A great amuse bouche is the absolute must for a great meal, for me. It sets the tone for an amazing meal and night with friends/family. This is absolutely stunning. My. Lord.

I like how you describe the dishes and how you don't always like everything. If I'm ever gonna dine at one of these places I need to build up my alcohol tolerance.i would be hammered before I got to the cheese trolley.
I ate there in May 2022 with the champagne pairing. Still one of the best meals of my life and as a Champagne amateur who goes back to Reims every year, the champagne selection for the pairing was impressive.

A couple dishes sounded pretty good, especially the tomato 🍅 dish, that sounded spectacular, I bet it even had some fresh herbs like basil and oregano to make the flavours pop...

Thank you for another great video! I have watched every you have made so far. It its amazing to see how you get better and better with every video. This channel is the most refreshing I have seen in a long time. In your first videos your intro seemed a little bit flashy and as if you are trying to show off. In the newer videos you have toned it done quite a bit, which goes much better with the theme of the channel. You also explain the dishes in much more detail and more calmly, plus the camera work has improved significantly! At first the camera was very shaky and you did dizzying turns and angle changes, now you only show clear pictures and better angles. Keep up the great work and your channel will explode!

I always wonder how long the meal lasts during one of your meals (sorry if I've missed it in the videos I've watched). Is it possible to mention that in each video? I'm always curious about how long some of the several-course meals take. My experience is France, and I've often been at the table for 6 hours for dinner menus with several courses. How are Michelin-star restaurants trending when it comes to time to complete a meal? Thanks!
I was fortunate enough to eat here when it regained its first star and again when it won its second star. The food was amazing and so inventive then as now, but the prices were a bit different!
Dear Alex, the comments you had are realistic, decent and fair... some small details are dividing bests with best of the bests. Salad at the end is spoiling sublimed prior experience, especially paired with that red wine.
