This honestly is a great concept for a new series, outside of just the michelin restaurants to showcase. This is a great way to show local hidden gems in areas that we as the viewer would never be exposed to.
i mean if they are showing up on 50 best, they aren't *that* far from the michelin scope. 50 best gets into parts of the world not covered by the michelin guide, like indonesia.
Lots of countries aren't covered by Michelin, it's actually quite restrictive. I think "michelin-grade" restaurant experiences can be expanded to great restaurants outside of the operation regions of the guide.
That is easily a 2 star experience based on the guidelines. I really enjoyed their implementation of theater with the descent into the basement level for a course.

Though many of the ratings from a global perspective seem to weight the scores heavily in favor of the French culinary tradition, which is a shame in the grand scheme of things.

If you're talking about food in Texas there are at least a half a dozen culinary traditions represented in the state's cuisines and the bulk of them are NOT from the "upper crust" of history's stories. BBQ is a de-facto peasant food, cooked using small quantities of fuel over long periods of time that utilize the "off cuts" of the animals. That in no way is considered "high cuisine" from a historic perspective, yet it is one of the largest culinary traditions of the United States South. Same goes for the side dishes involving greens and corn products. Those are peasant foods. And the guide isn't big on peasant foods in general.

It's not actually rolling the dice, arak strength varies from maker to maker just like wine and it's purpose like is it for cooking, drinking, or ceremonial. so one maker could have it' arak at 35% and other at makers could have it arak at 50%. And of course the one for sale have it's alcohol strength standarized because of different tax tarif on alcohol strength.
I'd never thought Indonesian Restaurant would be featured by Alexander The Guest. Been a subscriber since some of the first videos and fell in love with the way Alexander describe each fine dining experience. Touchdown, Bali! I've been going to Locavore since 2015. On several occasion, purposely choose their many Bali-based restaurant as dining place, or lunch, for my B'day celebration. Their quality, commitment on using local ingredients and creativity is top notch. While I'm bit lukewarm with their Jakarta's restaurant, I always make it to their Bali locations. Maybe, choose to stay in Ubud next time you have the chance and experience the Locavore universe within their arrays of restaurants in Ubud.
Everything you said about the restaurant made it seem like a 3 star. Worth a special trip, between the mushroom cave, your continued amazement of the food and the peaceful architecture and atmosphere it seems worth the trip.

Seems like a cool concept to me, "hidden gems". I'm from the Netherlands and I remember (this was a long time ago) this Toko, which is a store with mostly asian based products, in think Rotterdam or Utrecht. They had this option of 3 or 4 tables and they could serve to about 8 people and get some actually authentic asian food, in essence not "westernized". It was SO good :) Of course I realize it wouldn't really fit this channel because of it's, ha, "tight-knit cozyness", but I'd love to see more of this type of video's too!
Finally! I was there earlier this year and I think the place reminds me of a combination of Adria’s El Bulli, Refslind ILIS with a hint of Munk’s Alchemist experience. Love your take on this one!
I would rate Locavore NXT an easy 2 Michelin stars, it couldve been 3 if they are more daring to play with more shocking rare & high quality meats (personal preference too), but most likely it would jack the price

I can tell you the original Locavore location was turned into a fully plant based tasting menu and it was phenomenal. I dined at the original before they opened NXT it was a greatest hits menu I had the vegetarian option again fantastic and I can’t wait to try nxt
This is one of my favourite places in the world the thought behind the place from food to every detail…. Even that door has tons of detailing …hands down this is the most unique dining destinations no frills what so ever 🎉🎉🎉🎉
If you’re in the Canggu area, you need to check out their sister location Club Soda. Hidden bar with incredible atmosphere, in-house ferments, and great limited food items with frequent special evenings/menus. My wife and I go a couple times a week! Our favorite!

Beautiful restaurant and décor. I liked this better than many of your other visits to 3 star Michelin star restaurants. Beautiful presentations, looked like some great flavor combinations, a tour in the middle of their basement with interactive info about the mushrooms they grow and lots of interesting drinks to try other than the usual boring wine and champagne! At long last, food without being smothered by caviar - which I don't like. They deserve 3 Michelin stars and a return visit! What a treat this was! Too often restaurants charging high prices are catering to egos. Not here. They serve you with elegance. Thanks for sharing this unique place with us!
My girlfriend and I visited Locavore NXT two days ago! It was easily a two-star experience. Every dish was great, but it was the staff that made the visit truly amazing. I have rarely seen such a well-coordinated choreography all the way from the kitchen stations to our table.
So glad you reviewed this, I was here with partner recently and it was mind blowing. And shout out to Hujan Locale restaurant for perfect comfort dining too.
Love the program. Can I suggest an episode which explores the relationship between the Guide Michelin and Michelin's tyre sales in country. The interest is what do restaurants do to get recognised outside where brand Michelin operates, and are more stars awarded in those countries where Michelin thinks it wins? Wow, what a steal! You pay this for very, very average food and "meh" wine here in The Netherlands. I will get to Bali someday; I will surely remember this restaurant! Nice to see one of the owners is Dutch! From what I've learned through your vids, and having had lunch at a local (Rotterdam, wasn't blown away though) 2-star restaurant myself, I'd easily say 2 M-stars here.
Please keep visiting other fine dining restaurants other than Michelin 3 stars. I've been disappointed by Michelin's recommendations a few times, and would definitely respect your opinion more than theirs!

Wow, what a steal! You pay this for very, very average food and "meh" wine here in The Netherlands. I will get to Bali someday; I will surely remember this restaurant! Nice to see one of the owners is Dutch! From what I've learned through your vids, and having had lunch at a local (Rotterdam, wasn't blown away though) 2-star restaurant myself, I'd easily say 2 M-stars here.

Please keep visiting other fine dining restaurants other than Michelin 3 stars. I've been disappointed by Michelin's recommendations a few times, and would definitely respect your opinion more than theirs!
