      @@edsmith613 if you live near a "Publix" they sell a ground kobe beef pattie in 4 packs...otherwise wal mart carries grass fed beef, both are excellent products, or find the grass fed beef and get a grinder...every expert was a fool once

    I had steak tartare in France and it was great. It was served with really good fries that were fried in lard (not in vegetable oil).

      @@dkoz8321 man it will outfry any other grease, BUT needs to remain hot, to avoid over saturation. Prep warm your food and keep the temp up with an outdoor gas cooker.

      I visited Poland once, about 14 years ago. I found it to be a very lovely spot of the world. I was with my husband (business trip) & we met a very kind elder couple who invited us to their home for dinner. The lady showed me how to cook pierogi. That was when I learned that a recipe is simply a suggestion.
      It was the highlight of our visit. They were just so gracious & kind. It felt like we were old friends & I miss them.

      ​@@online-culinary-school Actually, Chef, Worcestershire is pronounced Wooster, like in Rooster or Booster :-) Other examples of 'weird' English name pronunciations: Leicester is Lester; Gloucester is Gloster, etc. I think English Sauce is a great name; most people understand it to be Worcestershire Sauce. Your recipes and explanations are excellent, by the way! Well done!

    I love steak tartare! I make mine with round steak and I use a food processor. I think it turns out fine. I don't use all those ingredients; just the steak, egg, onion, salt and pepper. I serve it on buttered Westphalian pumpernickel bread, topped with hollandaise sauce. Add a Caesar salad on the side, and you have a complete meal.

    Both methods look good and I love the ingredients. I think I might like to serve it to a guest un-mixed. The appeal in that for me is you can work with the creamy yolk and adjust the seasoning to your own liking. Thank you, Chef! ( I just made your Cordon Bleu recipe last nite...outstanding!)

    I've eaten this many times but I don't use the capers, Worcester sauce, nor the ketchup. Properly seasoned lean raw beef is delicious. Completely safe. Our kids were eating this before the age of two years.

    Thank you Eric! I also tried based on this, eventually decided to flavor the meat based on my own preference and it turned out wonderful. Did not even cut the ingredients into super tiny pieces. Served it with garlic bread (the tar tar went on top of the bread slice with some butter) in addition some cheese and gherkins, it would go rather fine with some vodka, my papa said.

    Tatar is very popular in Poland 🇵🇱. My grandmas and my Mom used to make it quite often. It's really delicious. Pycha! (Yummy!)

      What’s not to trust? Just keep this practice cold, and clean. Use a clean grinder, that’s kept in the fridge, use gloves, add and acid to help “cook” the meat and voilà. Trust yourself more than others, friend.

    My friend got a rump roast of deer and said "if you eat a raw piece I will". I never hesitated.it was kinda sweet and very tender. I love my steak to temp.

    The thought of raw meat freaks me the hell out. I used to literally cook meat until it was black when I was a kid. But today I'm conquering my fears and I'm gonna try the tartare with egg yolk. Hopefully I don't die. And if I don't like it, I always have a dog that eats anything

    It's safe. I've eaten this many times with no problems. Make sure your butcher or supermarket is trustworthy

      Problem is raw beef has nasty stuff that link to mad cow disease that’ll lay dormant in the body for decades. Not a good idea to eat raw meats.

      There is no actual proof to that, don't be afraid of beef. most of the toxins store in the fat and organs.
      you have nothing to worry about muscle meat.

    The best chefs i know don't grind or chip it. You use the blade of the knife to literally scrape the meat, then it comes out as a sort of paste texture, much better than ground

    A thong here in the Charente, France is to ask for it ‘aller retour’. This is steak tartare ready mixed then made into a patty and very quickly flashed on the hot grill for a second or two before serving.

      I mean... Yes but it's still safe to eat if you grind it yourself and I can see how people could like this dish. I've never tried one myself but I think I'd give it a go

      Falls or stands with which part of the cow you grind up. Most will use filet mignon or upper butt of the cow, but I prefer to use lende, not sure of the English name. It is the triangle like piece when you butcher a cow. A little more tough, but a lot more flavour. And the toughness does not matter much when you grind it up anyway.
