  • If you're on a diet to lose weight or simply seeking light, nutritious treats, these mini apple oat cups are for you. Crispy and light on the outside, fruity and naturally sweet on the inside, these apple and oatmeal cups are perfect as a quick snack or a healthy dessert 😍
    Instructions:
    Prepare the apples by peeling, coring, and chopping them into small pieces.
    Transfer the chopped apples into a saucepan and add the cinnamon sticks, water, and maple syrup. Cook the apple mixture over medium heat until the apples begin to soften.
    Once the apples are slightly softened, stir in the applesauce, ensuring everything is well combined.
    The apple mixture should cook for 5 to 8 minutes just enough to make them tender but not fully cooked.
    Add the cinnamon and ginger powder, then stir to combine well. Remove the apple filling from the heat and set it aside to cool.
    To make the crust, combine the cottage cheese and maple syrup in a mixing bowl, blending until smooth.
    Gradually incorporate the oat flour and baking powder into the mixture, stirring to form a dough.
    Once the dough begins to harden, use your hands to knead it until smooth. Allow the dough to rest for 15 minutes.
    After resting, place the dough on a surface lined with parchment paper and roll the dough out to a ⅛” (3 mm) thickness.
    Using a round biscuit cutter, cut circles out of the dough.
    Place each dough circle into a muffin tin, pressing it down to form a crust along the base and sides.
    Fill each dough cup with the apple filling, filling to the top.
    Bake the cups in a preheated oven at 350°F (175°C) for 30 minutes.
    Once baked, remove the cups from the oven and place them on a cooling rack to cool before serving.
    Ingredients for 9 Apple and oatmeal cups:
    For the Apple Filling:
    3 large gala apples (about 400 g), cleaned and cut
    2 cinnamon sticks
    2 to 3 tbsp. water
    2 tbsp. maple syrup
    1/2 cup (120 g) applesauce
    1/8 tsp. cinnamon powder
    1/8 tsp. ginger powder
    For the Oat Crust:
    1/2 cup (100 g) cottage cheese
    3 tbsp. maple syrup
    1½ cups (135 g) oat flour
    1/2 tsp. baking powder
