Btw anyone actually wondering why the filling is stirred in one direction, it's to develop the protein and give the filling its texture. Essentially, the protein structure breaks and rearranges as you mix and you must stir in only one direction for it to do so correctly.
Seonkyoung this recipe looks unbelievably authentic. Like the ingredients such as leek, white pepper, and the "one direction" stirring of the filling. I wonder if this is how Koreans make it, coz it looks exactly the same way as the Chinese do.

Hey just FYI the one direction thing is because when mixing the minced meat you want the meat (mainly the protein) to create long strands or strings within the dumpling filling creating a bit of a "springy" effect.

By doing so, the fibers in the meat are aligned in a consistent fashion. The result is a smoother, more tender texture when cooked. True story.
