First- I hope that your drinking is under control (or it will control you- and your cooking, as shown). And also first- now I know that I can cook octopus. I've had it just a couple times in my life, but it was sooo good. It's easy to ruin, I thought, but you've shown me that even I can do it. And since I bought some frozen a few weeks ago, and now it's thawed (just today)- I am going to cook it. It might not be perfect, but it should be good- and I will try again. I love the smashed potatoes, and will imitate that, too. Many thanks. (I've watched a few other videos, but you convinced me.)

Awesome video. I absolutely will try this. It looks amazing. I was in Rio de Janeiro recently and had an Octopus tentacle sandwich with chimichurri sauce on the beach. I would love to try and recreate it if possible. Would you also have a chimichurri sauce recipe that would go great with this as well? Yes it definitely possible to over cook it, depending on the octopus. Octopus cooks different depending on where it came from. Some shrink more than others as well. The key is to cook it enough to be able to stick a knife through it with little resistance. You should be able to pierce the octopus easily when its fully cooked, then remove it from the boiling water. If you cook it too much not only will it shrink but your knife will not easily pierce the octopus.
@@daP.A yeah its a tricky one, cause every recipe calls for different times,took mine an hour on high simmer to finally get a bit soft,was not tender but was somewhat tolerable,, and it shrunk like crazy,i will never get ones from asia anymore, even if it costs more ill look for fresh spanish or portuguese large octopus next time

20 minutes per pound, boil your water (lemon onion bay leaves salt and some good old old bay lemon and herb) and reduce to simmer level. Dip your octopus three times for 2-3 seconds , boil for time needed on weight. Turn on your grill preferably charcoal or wood grill. Don’t over grill just get a nice char. Make a olive oil lemon pepper garlic salt marinate. Grill some lemons. Use that grilled lemon to squeeze some juice on to your octopus 🐙. Mmmmm
💯 better olive oil, wine, cheese, futebol, coffee and much more, very underrated yet has better cheaper wine than France, better coffee than Italy imho. I will not even mention the food. Tha is for the comment.
@@daP.A I grew up in Montreal surrounded by nothing but Portuguese people.( big community here) and I couldn’t agree more. I have yet to try a Portuguese wine regardless of price or wether it was home made or not that wasn’t f’n good. Our frango grelhado here is a signature local staple. Obrigada bro
some people say to boil it for s short period of time and then grill it. Then some say to boil it for 1-2 hours. Such a big difference. I just watched the eater video and he blanch's it several times and then just throws it on the grill. Anybody know why the big difference?
Actually there's no salt in frozen octopus or is it salty by nature. Maybe whoever cooked it for you added to much salt to the recipe or boiling water.
philipeen smelled and tasted like garbage ,i have one from indonesia im looking to prepare right now and i hope im not disappointed, id like to know how to remove any bad smells or flavors and make it as tender as possible
Indonesia is not bad quality, certainly a Spanish or Portuguese is better but Indonesian is not bad at all. When boiling the octopus add half a lemon and bay leave to the water. The smell when boiling is normal but as you cook it it will go away. The smell will not be reflected in the taste at all. Thanks for you comment.
@@daP.A well i tried it and luckily this one did not smell rotting or old like last time (probably philipeens), i did add a bay leaf an other things then grilled the pieces etc it was actually not bad ,had this nice gelatinous fat on the chew but it could have been more tender ,some parts were better than others
Whats the difference between italian and Portuguese olive oil ? 🫒 🛢 you said port is more stronger in flavour then italian oil's well I'll tell you something man your getting tge everyday Olive Oil off the supermarket shelf try it from country in the South of italia man very thick & robust italian Olive Oil's beautiful !!

You can probably do a quick reboil.
