- How to make premium beef jerky from home.
This video will show you how to make a deliciously seasoned piece of beef jerky that will make your mouth water.

ingredients:
100g paprika
32g garlic powder
80g brown sugar
100g salt
15g smoked paprika
48g onion powder
16g black pepper
8g cayenne
the spice rub recipe above will work for several kilos of beef (guestimate 3-6 kg), but this rub is great for more things, can be used for BBQ or oven baking meats, go wild with it :D

Hi Heather I know it's been a year but you can actually make beef jerky in the oven on 200 degrees for probably 4 to 8 hours flip 🥩 pieces, maybe about once every 2 hours
I tried slicing into thin slices like shown here, and I also tried whole 1" boneless ribeyes, and both have their charms. The thicker cuts were super tender, but very obviously would only be good in the fridge for a couple of days. The thin cuts had more longevity and more resembled jerky. Insane recipe either way and highly enjoyable.

if you freeze the meat, can you slice it thinner and still get good results?
true, but think slices of beef jerky are awesome! so a rough cut of steak works just great.

Funny, because I recently started making cat food by just dehydrating chicken parts (without spices) in a simple oven, with the door slightly ajar, with temperatures of 50-60 degrees Celcius 130-155 Fahrenheit. The cat just loves it and hasn't been healthier ever. Now I know how to dehydrate something i could have myself. Thanks!

If I can suggest a video idea - I would love to find out how to prepare mackerel for sushi (you know, how they sprinkle it with salt, then wash the salt off and soak it in mirin or idk what). Would be great if you could help figure it out.

Have you done it with a wet marinade?
I did try a wet marinade a while back i used a sticky asian style sauce (mirin, garlic, soysauce, onion) the results were also great especially the fat parts they would get strangely juicy and were best when eaten just out of the dehydrator.

How long would ribeye jerky last for realistically?
depends if you fully dehydrate it around 1-2 months in fridge.
this preparation is a little less done I wouldn't advice keeping it more than 1-2 weeks in fridge.
but you will most likely eat it within the first 3 days since its super delicious

The last few weeks here in the Australian outback was in the 40 degrees (celsius) and so this video came out just a bit late as it now finally cooling down. But, for future reference, can the steak be dried outside in 40+ degree heat? Would love to make this next time summer comes round!
If you dehydrate meat like they, they call it Biltong in South Africa. And I have made Biltong that started 1 inch thick. It turned out amazing.
Can this be done with other meats, or even fish? I love beef but wouldn't mind something a little different.
What if i don't have a dehydrater
I just need steak to survive one day of Texas heat without refrigeration. Obviously jerky made from ribeye isn't going to have a similar shelf life to normal low fat jerky... Do you think it would last one day in the heat? Maybe two?

Has anyone tried recipe without the brown sugar?
If you’re planning to remove the sugar fully, you’ll have to adjust the amount of salt in the recipe, since it is a balancing act between sweet and salty.
If you just want to swap out brown sugar for a different sweetener, then that should be fine

Like beef strip cooked in a pressure cooker and then dehydrated.

Yo how to make sushi I tried this in the exact amount you said it was way too much paprika everyone in my house couldn't handle it..... I has to wash it in water and reason without paprika..... the paprika is fcking insane amounts cayenne also a bit much I'm honestly sad I tried it.

sooo you just ruin a fuckin 50$/kilo rib eye to make beef jerky which basecally tastes like normal beef jerky cause of all thr spices? Thats pathetic.
Well to start with this ribeye is 12€ a kg get it from a wholesaler at cheaper prices, and I have made this with cheaper cuts there is a quality difference that is noticeable.
Wow? You don't even let the meat soak in the spices? Your meat looks more like it was fried with a coating of batter on them.

Jerky that thick is asking for a nice case of botulism. This is not a recipe for amateurs. Hope your lawyer is on speed dial.
Like I said in the video this is not a jerky for keeping long, its to be kept in the fridge and consumed within a short period of time
