The recipe for the tarts is perfect. The first time I made the shells they turned out a disaster as I did not know how to bake just the shells. But they tasted so good so we just ate them like cookies with jam! This morning I made the shells again and they are perfect. Experience helps ) I prefer making the shells and storing them as then I can use them with jam or lemon curd as and when guests walk in. Thanks for your lovely videos.

If you're using a nonstick pan, you don't need to spray the pan. But, if not, it would be best to either butter or spray the pan to make extra sure they release easily.
Can I bake the shells a couple of days ahead and keep? I have a dinner party on Saturday, can I prep early? If yes please suggest how do I store them..Need your help urgently..

I use different brands. The brands I normally use are Plugra, Land o Lakes, and Kerrygold.

If you have an oven where the heating element is on the bottom, then have your rack in the center of the oven.

I use a Kenwood Titanium Chef mixer. Sorry, but I don't know about the other Kenwood models.
