Nick made manly 2 mistakes first the broth the broth became brown but it is meant to be white and he did not skim it and he used pork bones that were covered with so much meat it is supposed to have less meat his second mistake is the chasu pork after cooking he had to let it cool for 12 hours so that u could cut it probably since he boiler it so it was too tender to cut properly

Texture is most likely a result of the high hydration of the noodles. Had you added less water, they’d be much firmer. Resting and kneading appropriately also allows the gluten to develop further and create a nicer noodle. (You definitely needed more rests and kneads) You can also adjust your kansui to change the noodle’s firmness and texture.

I have a tip! When it’s really hot just make sure your milk is really cold and then put ice in your milk and if it’s still spicy just add ice in the noodles! But it kinda lacks off the challenge for the spicy noodles but the milk and ice really helps! I really like spicy food so milk and ice helped me so much!

Yes I never use gloves for anything even for chilies. I just make sure to wash my hands properly after and to not touch my eyes or my face.
