Man I love chicken enchiladas, what i do is do a quick fry of my tortillas when making them and it keeps them from tearing or falling apart when assembling and leaves a little crunch on the edges after baking. And a smothering of cheese is a must and I serve them with Mexican cream or regular sour cream and queso fresco. Great job and Thanks for sharing brother. Happy New Year!

Doing it this way is a bit time consuming, I do it when I have the time. I usually make a casserole or pie to make it faster. Just layer the tortillas around the pan and add the ingredients in layers like lasagna. It still has all those flavors just faster. It is good though, my kids love it when I make it. I have the same comal… 😄 Great recipe, super easy to follow. Only one ☝🏽 tip, 20 minutes in the oven was too long. It dried up my enchiladas. I think 10 minutes would work better or eyeballing it until the cheese melts.

What's a good substitute for the dried chili's? My store carries dry New Mexico hot chili's. Do dried chili's go bad?
You can use chili powder, that is how my mother does it. Use 2 to 3 tablespoons in replacement of the dried chili's.

The chillies I used in this recipe are not spicy. Depending on the season poblanos or other peppers can be really spicy
