- There are various versions of citrus flavoured bread-cakes that are made in Italy for different occasions. Panettone and pandoro for Christmas and colomba di pasqua for Easter being the main ones. This recipe is inspired by all of them. This is a simple yeast leavened cake made without kneading, baked on the same day and totally beginner friendly. It looks beautiful and tastes great full of orange, vanilla, and rich with butter and honey. And the crispy almond and cocoa topping is something very special.

This is a lot easier than what I expected, you make it all so beginner friendly!
You should try a south Portugal easter cake called Folar de Olhão. Its layered with a kind of caramel with cinnamon, is delicious.

When I was notified about this recipe, I didn't believe it would taste like orange. But, you are using orange oil. I use whole ground up oranges and orange extract. But, I didn't know about the orange oil. I will add that next time. Thank you.
And, thank you again for telling us about fermented rye malt. I scald it with semolina flour to make semolina rye bread with ground up caraway seeds. Because of the hydration, my bread turns out moist. It has that more robust feel because of the semolina and the pumpernickel taste I grew up on, but could not find in stores. I also bought a package of rye bran from Alex in the Ukraine. I am glad you said don't be intimidated with the Cyrillic writing.
This looks and sounds delicious! The topping reminds me of your no-knead Panettone recipe from a few years back. Again, will plan to bake close to Easter to share at the office and at the family Easter gathering.
Baked this last night after work - two loaves, one as a 6" round and the other in a Zyliss 2lb loaf tin. Both loaves rose very nicely and beaked beautifully. Brought to the office to share this morning - finally cut into it and WOW - the lovely sweet orange fragrance. The crust is firm but not crumbly and the interior is just as shown in the video. Slathered a slice with some homemade mascarpone and homemade orange marmalade - such a perfect combination of toppings for this bread. (#329) Photos have been posted.
Thank you for the recipe, I tried it and it turned out amazing! I had never seen this method of folding the dough before and I didn't even know that the no knead method could work for enriched breads so I definitely learnt something new :)

Oh Charlie! Those egg yolks are an amazing color.😍 My chicken's egg yolks are a deep golden yellow, but NOT orange like your eggs! The bread looks SO delicious!😋 I've made a Guernsey Gauche, which looks similar. Now I've gotta try this one.😊💕

This was too good! Great job on such an accessible variant on pannetone style cake bread. The topping is awesome. I didn't want to use egg, so used yudane to help with the fluffy texture, and substituted milk for orange juice to try to get a more orangey taste and colour (not sure it made that much difference). We waited a couple hours to cool and it seemed cool on the outside, but it hadn't properly set yet and was better the next morning, so next time I will leave it overnight (very keen to try again soon!). Not sure if I'm brave enough to try hanging it upside down to cool. Can I ask why in eg cinammon roll recipes you combine the butter cold and mash it into the dough, and in this one you melt the butter (which was much easier!)?
That is an old method I used to use back when I was actively kneading dough. There is no need to do that for this type of recipe.

Where do you get your orange oil? I've never heard of it before!
Local supermarket (Sainsbury's) always has it in stock. It comes in a tiny bottle.

Couldn't get any rise out of this, sadly. Used yeast I use all the time. I swapped the soaking rum for a little brandy, but that's the only thing I really changed - not sure what went wrong.
Was the temperature right? If this ever happens all you need to do it leave it to sit for longer. It will rise eventually. Not sure why it did not this time.
