I do wings every way, and also on the green egg at different heats, direct and indirect. I have not tried mayo, but I will now! Great vid, and I like the grilled romaine too.
If you have somebody that cooks for you like this...they love you. They deeply love you. They may have faults...but nobody is gonna love you better than a true cook.

That's an old myth. In reality, the wood is more antimicrobial than plastic. The wicking motion of food fibers quickly draws moisture out of microbes and causes them to be destroyed. Meanwhile, bacteria that can become lodged in cracks and scratches in plastic can just sit there until the next piece of food comes along.
