I LOVE Mark and his CHILI's! Everytime I watch his video's---no matter where he is---I WAIT. Because I KNOW when he gets the food he will be adding the Chili's to the sauce dipping. It has started me at home to make sure I have these Chili's to the meals I prepare. I can't always use them as he does, I am not as accepting of hot spice---but the times I do I am impressed. Great content, Mark. I agree the Cebu region probably has the best-roasted lechon so far in the country where their dipping sauce (vinegar, soy sauce, onions, chili, etc...) differed from some other regions which use liver sauce (pork liver, vinegar, sugar, bread crumbs, onions, garlic, seasoning, etc) which is also very tasty. I prefer the regular vinegar + soy sauce + chili for my dip and I use the liver sauce to mix my rice :). Although the topic is roasted lechon, You (Mark) should have tasted the "Lechon Paksiw" which is just a left-over lechon cooked in vinegar, soy sauce, onions, laurel leaves, etc... where you don't need a Chef ...just regular Auntie or Grandma or any person who cooks adobo. Eat it with steamy evenly cooked rice and you will have a different experience.
Here is what I am going to say....when you have PERFECT Pig Recipes you cannot go wrong. Thank You, Mark for PERFECTION! Pig and Lamb are my favorite meats when done properly. I had the honor of experiencing Lechon in 1990 at a Philipino birthday party in Houston, Texas, USA back in 1991. The chef removed the head first, and then he carved the little piglet as if it were a loaf of bread. It tasted wonderful!

Our lechon in Puerto Rico is equally popular. The roadside places look similar, though nut so crowded. I think the big difference is that the lechon is not stuffed. Also, soy sauce is not used to baste, so the skin is not red. Philippines and Puerto Rico--lechon capitals of earth !

Those "sea grapes" are available here in Arkansas supermarkets in a little jar and it looks like caviar, but is absolutely tasteless that way. I would love to try the fresh ones on the stems. The enzymes in the shredded papaya are necessary for proper and safe digestion of the pig. Substitute pineapple or kiwi for the enzymes.
I bet those sea grapes are already limp, slimey, and popped. You definitely should try them fresh. It's so fun to pop them in your mouth. We usually go during low tide to find those (molluscs and sea urchins as well), then find a sand bar or bunch of rocks to sit in, take out our rice, and dip those sea grapes on the spiced coconut vinegar dip we bring with us. There are spicy varieties of the sea grapes as well. On It's own, sea grapes are actually kinda tasteless, but if you get them fresh from the sea, the taste the ocean enhances the flavor. Slimey but not the disgusting kind of slimey.
@@iagreewithyou3478 No. Neither limp, slimey, or popped. Not even salty! I think my problem is that I expected them to taste like seawater at least. But no.

Most of what I saw that's bottled/canned have already shriveled up haha I suggest just preparing a vinegar dip for it, with salt, sugar, garlic, chili, and onions. It really doesn't have much flavor on its own. Perfect side dish for grilled fish or meat.

As long as the Lechon is tender, it’s good. Flavor varies from different provinces. Plus, the skin should be crispy with a texture as thin as the sugar glaze and is not hard to your gums. Most especially, juicy. No sauce needed. Just plain 90% lean, 10% skin and fat

I grew up in Cebu! And we always went to Talisay for our Lechon! I live in Arizona now, and I miss Cebu lechon so much!! I was tasting the crispy lechon skin thru your video, Mark! Thank you for taking us on a lechon tour of Cebu… Someday I will bring my fiancé, Charlie, to Cebu and have him experience eating lechon by the side of the street! He is Canadian so I wonder what he is going to think! 😂 😂😂
Finally Talisay Lechon is acknowledged! That's where the best lechon came from and also i love how you pointed out that Talisay is where Lechon originated. (i live in that city BTW) A lot of tourist are misguided saying that it is from Car-Car which is what kind of triggers me
That's your opinion simply. You may not know that people from Talisay just move to Carcar to sell lechon because it has a bigger market place and people going to tourist destinations at the south can just pass by. That doesn't make it "CarCar" lechon.

There’s a big difference between rotisserie lechon vs oven cooked lechon. Rotisserie wins every time. The rotation helps spread the flavor all over the pig where as in the oven it just sits in the bottom of the pig’s stomach
They didn't know Carcar has the best lechon or the best lechon maker/cook.. My neighbor told me they used to cook lechon before in talisay they were hired that's why talisay already know the secrets behind every crisp and every flavor of it..
"They didn't know" when literally tourists in youtube vlogging goes to Car Car instead of Talisay. The problem with Talisay's lechon is it's located at an obscured area so some of them may just move to a bigger city that people going to the southern mountains where the tourist spots and resorts are can just stop by. But in reality, that's basically just talisay lechon sold in Car-car because it has a bigger market place.
By the way, Carcar is my hometown, and what I said about it truly did not come from me, it was our neighbor's, 😆 he said they were hired to cook in Talisay, that was a long time ago, actually. I also have a friend living in talisay who always orders lechon here in Carcar whenever she has an occasion. No need to wonder why 😅 And I don't remember people living in Talisay coming all the way here just to sell their lechon. Most of the sellers here are generally from here. And i know how your lechon tastes compared to Carcar.

You know I can also say that I know people from CarCar who'd buy Lechon from Talisay and I know how carcar lechon tastes compare to talisay lechon. I like the fact that you said actually admit that sellers from lechon there came from Talisay and it doesn't matter if that was a long time ago, it's still their ancestors who passed their techniques to those who are now just born in CarCar. It's just like saying if a Spaniard is selling paella in the Philippines, you'd call it a Filipino paella despite the fact that the recipe came from the Spanish ancestors.
My Philippine friends cooked this for us at a work Christmas party here in New Zealand, and omggg… It was sooo amazing the flavours in the skin.. Just thin without all the fat.. It was like meat toffee crispy candy.. So delicious and I will never forget the taste❤

The sea grapes are definitely way better fresh. They’re usually harvested in the morning and sold in markets that same day.

I bet those sea grapes are already limp, slimey, and popped. You definitely should try them fresh. It's so fun to pop them in your mouth.
We usually go during low tide to find those (molluscs and sea urchins as well), then find a sand bar or bunch of rocks to sit in, take out our rice, and dip those sea grapes on the spiced coconut vinegar dip we bring with us. There are spicy varieties of the sea grapes as well.
On It's own, sea grapes are actually kinda tasteless, but if you get them fresh from the sea, the taste the ocean enhances the flavor. Slimey but not the disgusting kind of slimey.

@@notmyworld44 oh at least the texture is preserved. Most of what I saw that's bottled/canned have already shriveled up haha I suggest just preparing a vinegar dip for it, with salt, sugar, garlic, chili, and onions. It really doesn't have much flavor on its own. Perfect side dish for grilled fish or meat.

As long as the Lechon is tender, it’s good. Flavor varies from different provinces. Plus, the skin should be crispy with a texture as thin as the sugar glaze and is not hard to your gums. Most especially, juicy. No sauce needed. Just plain 90% lean, 10% skin and fat

I grew up in Cebu! And we always went to Talisay for our Lechon! I live in Arizona now, and I miss Cebu lechon so much!! I was tasting the crispy lechon skin thru your video, Mark! Finally Talisay Lechon is acknowledged! That's where the best lechon came from and also i love how you pointed out that Talisay is where Lechon originated. (i live in that city BTW) A lot of tourist are misguided saying that it is from Car-Car which is what kind of triggers me

That's your opinion simply. You may not know that people from Talisay just move to Carcar to sell lechon because it has a bigger market place and people going to tourist destinations at the south can just pass by. That doesn't make it "CarCar" lechon.

There’s a big difference between rotisserie lechon vs oven cooked lechon. Rotisserie wins every time. The rotation helps spread the flavor all over the pig where as in the oven it just sits in the bottom of the pig’s stomach

My neighbor told me they used to cook lechon before in talisay they were hired that's why talisay already know the secrets behind every crisp and every flavor of it..
"They didn't know" when literally tourists in youtube vlogging goes to Car Car instead of Talisay. The problem with Talisay's lechon is it's located at an obscured area so some of them may just move to a bigger city that people going to the southern mountains where the tourist spots and resorts are can just stop by. But in reality, that's basically just talisay lechon sold in Car-car because it has a bigger market place.
By the way, Carcar is my hometown, and what I said about it truly did not come from me, it was our neighbor's, 😆 he said they were hired to cook in Talisay, that was a long time ago, actually. I also have a friend living in talisay who always orders lechon here in Carcar whenever she has an occasion. No need to wonder why 😅 And I don't remember people living in Talisay coming all the way here just to sell their lechon. Most of the sellers here are generally from here. And i know how your lechon tastes compared to Carcar.

You know I can also say that I know people from CarCar who'd buy Lechon from Talisay and I know how carcar lechon tastes compare to talisay lechon. Anecdotes and I don't know what you're trying to prove with it. I like the fact that you said actually admit that sellers from lechon there came from Talisay and it doesn't matter if that was a long time ago, it's still their ancestors who passed their techniques to those who are now just born in CarCar. It's just like saying if a Spaniard is selling paella in the Philippines, you'd call it a Filipino paella despite the fact that the recipe came from the Spanish ancestors.

My Philippine friends cooked this for us at a work Christmas party here in New Zealand, and omggg… It was sooo amazing the flavours in the skin.. Just thin without all the fat.. It was like meat toffee crispy candy.. So delicious and I will never forget the taste❤
