As a retired chef I am glad to see that you turned it down to a simmer. I was afraid that a boil would turn it to leather. I worked in a seafood restaurant 25 years ago and I used to get so mad when I saw a new chef cook things to death. They used to serve abalone that was breaded in house and they would cook it until the breading browned. I wanted to kill who ever taught them that. I showed them the right way. It came pounded and all I did was a bit of butter and garlic and then put it on the grill just like you did here and basically warmed it through good and it would turn out tender every time. That is why I was a bit nervous about you boiling it hard. I was also glad to see that you melted your wonderful Guernsey butter like you did with the garlic. You might try browning the butter next time (just cook it a bit longer and it will start to turn brown. then add your cuttlefish. Another trick to try is do it the same way and then serve it over a bit of angle hair pasta, mix it together so it is combined then add either some cheese or Parmesan cheese. finely ground (or grate) either cheese and sprinkle over the top

Went on holiday to Fuengerola, Spain once. Self catering. I bought a cuttlefish from the fishmonger. I could tell he was thinking "Who is this gringo?". Took it home and made a delicious cuttlefish stew with onions, sweet peppers, tomato, black olives, aubergine, garlic , tarragon and red wine. Utterly superb. Long cooking is the way to go with cephalopods. Sorry, I can't remember the measurements, just made it on the fly. Love your videos.

I wasn't feeling well as I thought that I might have the CORONAVIRUS. Got tested negative and doctors said that I should just go fishing to relax and eat more healthy foods such as fish and vegetables with figs and dates.
So I caught an Octopus with some other seafoods. I decided to make a Paella with lots of seafood and rice. Daughter caught a few large Squids.
I am adding to the dinner lots of cut up Polish smoked sausages. Doctor is coming over for dinner too.

If you soak it in heavy heavy salt water for a couple hours it will be just as if not more tender then you could sear it in a hot pan with
    Soy sauce
    Ginger
    Brown sugar
    Honey
Guarantee you that it would be the best you have ever had mate.
    Happy fishing and tight lines.

So. Never had cuttlefish, but I do like calamari and have had both fried calamari and some sort of calamari soup. When you made this though, as soon as you started cooking it in the garlic, butter and paprika - I could seriously see this over a bed of fried rice!

  • @tonycamplin8607

Another really great video. As you've proved with all squid type fish you either cook them quickly, for a couple of minutes or for a long time. I often cook squid in a tomato sauce to go with spaghetti. Just cook them slowly with chopped fresh, or tinned, tomatoes in a frying pan with plenty of olive oil, garlic and Italian type seasoning herbs plus a glass of wine for about an hour. Near the end mix in some double cream, it's delicious, I think so anyway and goes perfectly with spaghetti.
Looking forward to the next video.

I think the cuttlefish like that would be good, if you add a little soy sauce to the water when boiling. Set it aside and dry up some sweet peppers, onion, and any other vegies you like, just till they get slightly tender, toss in the cooked cuttlefish and add some of your sweet chili sauce, like a stir fry.....I think it would taste amazing.
