Tip - put a rack (can use chopsticks or two knives, for example) on the plate , for the toasties to sit on. Keeps it crispy as its not sat directly on the plate and getting soggy
Yes! Great tip. Letting that bit of steam escape instead of getting trapped is clutch
Warming the plate in the microwave beforehand can also reduce condensation
I saw this "tip" from some random video the other day and it's about the stupidest idea I ever heard. Absolutely nobody is ever gonna do this. The bread doesn't get soggy. You're gonna pick it up in a few moments and probably dip it in soup anyway.

Most of this why it's better in restaurants series can be summed up by fresher/ better ingredients and more fat and sugar. An indulgence as opposed to something you would have regularly.
Butter, animal fat, stock, sugar, and more salt then you'd use at home. That's like 90% of it right there. Ingredients are a huge part too but honestly the salt, butter, sugar, stock thing makes a bigger difference. My first chef always said flavor is an illusion and I always thought he was being pretentious and vague on purpose but no he's right.
Real pimento cheese and toss some chicken in it and it's goooood. They made it like that at my college

Using mayo to cook your bread is really good for that caramel color.
It has very high smoking point so you could use higher temperature if you want to.

Butter gets burned very fast so I wouldn’t go above 3/6 on my stove.
Mixing some olive oil with the butter can increase the limit of when it starts burning.

One more thing is dont put your sandwich directly on a plate when you’re done grilling. The steam coming off the hot sandwich will make your bread soggy and lose its crisp.
Instead you should put your finished sandwich on a wire rack, or the easier option is set two forks face down on your plate and rest your sandwich on top of the forks (essentially just lifts your sandwich off the plate and allows the steam to escape)
This is the same reason why french fries aren't crispy if you order them to go. You gotta keep the bag open, and not stack anything on top of the fries.
Fast food places typically will throw napkins on top and fold the paper bag closed. That's no bueno for crispy fries.

Rather than salt, i recommend using 1 or 2 chopped up green olives. The saltiness is still there but more interesting

I prefer monterrey jack sometimes instead most times because swiss flavor overpowers the subtle cheddar taste.
Never tried Swiss on a grilled cheese but it's my favorite cheese in a burger

Cooking it slow is the secret. Put the burner on the lowest heat possible and just wait until the bread browns. The heat will dry out the bread before it toasts, which makes it crispy.

@@Hollywoodhec ahh, brilliant. I also have found they can put electric pads of sorts under your counters, when you put a magnetic surface, or magnetic mat, on top of the correct surface area it will act as a heating element.
@@Hollywoodhecit's an induction or conduction burner or whatever it's called. Also a case iron wouldn't hold that much heat. I know this because I always think it will so sometimes I'll turn off the heat and let it coast and come back and my food isn't done on one side. I mean fr cast iron holds heat really, really well but not likethat. Seriously I "believe" this too and always work assuming this is true (I cook for a living 10 yrs at different from scratch restaurants, 2 yrs catering mostly weddings and old Ky horse money) and I make the mistake of doing this all the time to this day. I made eggs in a nest earlier this week in a cast iron (with a f ton of butter 😂), flipped it, waited 20 seconds then killed the heat and walked away thinking it'd be good (I had prep to do, so was multi tasking) and nah I just got burnt toast and raw egg on one half.

Great tips! I think you can use whatever cheese you want, but be mindful of the melt factor. Some cheeses melt much better than others and some not at all. If you're going to use non melty cheeses, try grating them and mixing them with a melty cheese so you can still get that nice gooey texture.

Pro tips: Do NOT underestimate how fast the buttered griddle will burn your bread even on medium/medium-low heat. Keep an EYE under em!
Use little *campari* tomatoes! Halve em for more surface area to brown. Don’t use too much oil for them either. The sugar will caramelize w the apple cider vinegar, reduces faster than you think.
I added bacon & that TOMATO JAM put this thing WAYYY over the top!! Best grilled cheese sando ever _because_ of that jam! Add MSG while sautéing em. 🤌👌

Also if you really want a good one. Make your own processed cheese. You can make any combo of cheese melt and flow like kraft singles with a bit of prep and some emulsifiers. Basically the same thing they do to make American cheese

Use garlic salt instead of regular salt.
A little bit of cream cheese can make it creamier if that's your style, and I pretty much always add a touch of spice with hot sauce or something similar. All the dairy stops it from being spicy, you just get more flavor.

Butter the inside of the bread before adding cheeses that melt well (like havarti), mayo the outside. Roasted tomato/bacon jam is excellent inside.
My personal favorite is making a tomato confit infused mayo with lemon zest 🤤🤤
