    HEATH! This is how I do my bbq at home. Thanks for showing the world all you need is a little heat & a vessel to cook in & you can make some great food without having to spend thousands on a an expensive cooker

    Last year I got myself a spider venom for my weber kettle. It makes smoking on the weber SO EASY. I’ve smoked several pork butts overnight with it. It’s an insanely good product for the Weber.

      Ditto, been using my Venom for a couple years now. Many cooks with it. I now run pork butts overnight so I can pull it off in the morning and give it a long heated rest. That way I can pull and serve it whenever I want and not have to worry about it being ready for dinner time.

    Thanks.. thorough simple instructions. I cheat at the wrap and put in the convection oven at 275 with my temp spike until 203 area.

    Looks beautiful! So about 5 hrs until you wrapped it, then about how long before you took it off to rest? I’ve got an 8-pounder I’m doing this way tomorrow…

      Thanks! 8 hour total cook time or until it hits 210 internal. I'd let it rest for an hour minimum. Ours was 7.5lbs.

    I haven't seen $1.69 for a bit. Thanks for the video. I can't recall if I've mentioned this-your garlic jalapeno is exceptional with roasted sweet potatoes. Tossed with butter, honey and rosemary plus your rub and it is a big hit around here. And yes, brisket would be great.

    Heath you gonna have me spending money this weekend. Down the block neighbor has his 22" Weber kettle for sale. His was one of those custom builds and he only wants 100 bucks for it. I couldn't see myself really wanting it and now I'm like "Oh man...now I gotta drool all night till I can get to the ATM in the morning."

      $100 is a good deal if it's in good condition! They're typically around $200-300.

    How much heat is in your Jalapeño rub?

      It's a backend heat for a flavor pop. It gets hotter the more you layer on. None of my rubs are meant to burn you up.

    I always do my pork butts on my 22" WSM. I can do between 4-6 of them on it, and just vacuum seal them off for friends, and family. All the pros seem to be partial to the drums though. Is that common from your experience? Because if you're telling me I need to buy a drum, I'll tell my wife, "Heath Riles said I need a drum!" haha Also, that pork looked incredible! Nice job with fire control on the kettle!

      Appreciate it! Yeah, drums are very popular in competition bbq. I don't want to catch all the blame. 🤣 But you can make great pulled pork on Webers, offsets, pellet grills, or drums to be honest.

    Heath - I have always heard that smoke only penetrates the meat for the first 1-2 hours. I've done butts / brisket / etc on my kettles w/ snake but only throw a few chunks on near the beginning of the snake. The snake will take quite a long time to burn around. Does pork take on more smoke after 1-2 hours? Just curious!

      There was a really good smoke, grilled flavor with this pork butt. Our snake method was still going strong after 10 hours, so I'd highly suggest using that method.

    Bro...I have a masterbuilt electric, 250 gallon propane, 32 assassin gravity fed, a masterbuilt gravity fed and I just bought a butt today, to cook on my weber master touch tomorrow. First time trying a butt on the weber.

    Would it get more smoke if you put the vent over the meat? Or what are your thoughts on that?

      Vent always needs to be above the meat for the best smoke flavor. And the lid really needs a thermometer down closer to the bottom edge, in line with the vent. The stock thermometer location is fairly useless.
