Arya and the hound stayed at that house and the fathered offered him fair wages for fair work but he ended up robbing them and telling Arya they would never have survived the winter. This was him being confronted with his own actions and like you said, the changed hound felt it in a way the old hound would not have.

One thing that shows Sansa's growth over the years through her experiences is the ability to see the bigger political picture. She learned, sadly, how the realm thinks and operates from Cersei, Baelish, and Ramsay. She has great knowledge. Something Jon needs at his side as Jon is always beholden to a more direct and even narrowninded code. She understands the need for both allies and strength for survival. She can now effectively play the game.
All the giants that ever died and not burnt afterwords are with the night king, which is why you see so many.
