If the fridge contains lots of water and food, you may want to plug it in the night before, because all the food/drinks will take time to cool off as well!
I did a very budget set up in the back of my Jeep. Everything was less than $100 from Facebook market place and I was so lucky everything fit perfectly.

a 1/2 Rabbet bit would have been perfect for that cut. It has a bearing on it and cuts a perfect 1/2 inch inset rabbet so no need for the straight edge
I wouldn't put your med kit in the hardest to access spot in the whole vehicle. Deep inside a cubby behind other items that will then have gear on top of it in the rear of the vehicle. It should be within arms reach of the drivers seat.
I'd put the fridge on the right side so when the door open and table is used I can climb inside easily. Or sit there, on the left side. But the sub is there, a little compromise. but then you can't slide if table is used.. Hmmmmmmm probably left side is a better choice. Hm. hm hm
