- Learn how to make Pork Floss Milk Buns! Soft and fluffy Japanese milk bread is stuffed and topped with pork floss (also called "Rousong" or "Pork Sung") and a kewpie mayo sauce. The Tangzhong technique not only makes the bread more moist, but makes it keep at room temperature for a longer time. Perfect for breakfast or a snack! Enjoy!

Recipe makes 10 Pork Floss Buns
Ingredients:
Tangzhong (starter):
1/4 cup water [60 mL]
1/4 cup whole milk [60 mL]
3 tbsp bread flour [22.5 g]
Dough:
1 large egg [50 g]
4 tbsp unsalted butter [56.8 g]
1/2 cup whole milk [120 mL]
1 tbsp + 3 tbsp granulated sugar [12.5 g + 37.5 g]
2 1/4 tsp active dry yeast [7 g]
2 1/2 cups bread flour [300 g]
2 tbsp nonfat powdered milk [16 g]
1 tsp salt [5.7 g]
Egg wash:
1 large egg [50 g]
1 tbsp water [15 mL]
Filling and Topping:
about 2 cups pork floss
1/3 cup kewpie mayonnaise [80 mL]
2 tbsp sweetened condensed milk [30 mL] Хобби

Hello - no specific kneading technique is required for this bread. I'd suggest just pressing and folding the dough repeatedly by hand. We demonstrate manual kneading techniques in our ensaymada video here: ruclips.net/video/5ebR5h0anT4/видео.html

I have a question, but first thank you both so much for sharing us your recipes. I tried this recipe and the dough was sticky, it raised and all and very good but I kind of had a hard time shaping them. Can you tell me what I did wrong?
Hi Connie - depending on the brand of bread flour you used, it may require less liquid. I'd suggest trying to add a little less milk, or kneading the dough for a bit longer. Hope this helps! :)
It’s me again, I did kneaded it longer and it worked. Tangzhong really makes a lot of difference. I have another question though, do you guys have a recipe using wheat flour? Thanks again and happy Memorial Day. ❤️

Handsome couple! I tried this recipe it was great. However each bread flour is different just wanted anyone else to know. Your recipe call for 2 1/2 cups of flour with half cup of milk didn't work with the bread flour that I use because this one absorb water more so I have to add an extra 1/4 cup of milk in order to adjust with this recipe. Every oven is different too I have to baked 375 in order to get the same result like you guys.

I remember watching a well renowned cooking /baking international competition on TV for professionally trained chefs . One contestant used this particular technique and the popular judges were MEANLY SKEPTICAL velifying him , openly smirked, trashed the result unfairly partly because the technique is Asian in origin thus a blatant racism against it. Those western biased attitude were not lost on the viewers and I stopped admiring those judges. It seemed the show lost its appeal as well as the rest of its kind, disappeared from TV. They are trying to get on YT.
