Suggestion, instead of cutting out material at the end to make a chuck grab, cut into the material and have the chuck pull outwards, that way you dont need to cut off the part in the chuck, nobody will even notice. See matt jordan or andy philips videos for example.

It occurs to me that if the meat is deep frozen, it would naturally defrost from the outside. Removing that layer would generate heat though. Maybe outdoors in northern china in the middle of winter?

I love your videos, but it pains me to see you use a hack saw, a hack saw is meant for metal, you should invest in a rip saw or a dovetail saw, it would save you a lot of time and arm stress.
2:25 Smart move... I left mine out to dry over night and the security cam showed the neighbor's cat knocked it off my bench. After their cat has dug up my wife's flower beds countless times , chit in them on a near daily basis, sprayed our siding leaving stains, scratched our vehicles, neighbor couldn't care less, and now this, I trapped their cat and took it for a 5 mile drive , let it go, and being certain never to see it again! That was last year and neighbor gives us the evil eye more now than they did previously... I just look the other way and laugh but making sure they can see it lol

Just a friendly advice - it's not recommended to use a sandpaper on a lathe. Its guide rails wear out faster.
