As a Zoho One user, should we be linking this to Campaigns or CRM. Should we have a hidden field in the form to store a value for the source of the lead? In the case of a Newsletter signup, have the source defined as "Newsletter"? (I found I could do both, so I did) :)

You have the flexibility to integrate your landing page with either or both services, based on your requirements. We are also introducing a feature that allows you to send UTM parameters and GCLID (for Google Ads users) to Zoho CRM. This feature will be available later this week, so please keep an eye out for it!
