From my years of experience making fries(lol), the cornstarch is the real trick here for a crispy potato. You want anything you're frying or trying to crisp up to be dry on the surface and the cornstarch does a good job soaking up any extra surface moisture. Good to mix into your flour if your breading your fries or chicken. Also no need to parboil if you cut a little thinner.

When you were adding the seasonings to the roux, I was actually surprised there wasn't a bit of dried mustard in there. So good in cheese sauces.
Definitely, I always use mustard powder in a cheese sauce - but also I definitely never add sugar!
Soaking also removes potassium my mum was on dialysis and soaked overnight so she could still enjoy French fries 🍟
Nino's recipe is what I always use!! Comes out perfect every single time.
Edit: I've used it for smaller size fries as well and it comes out perfect as well. I tend to marinate the fries in beef seasoning, vinegar, salt, and a tad bit of sugar as well. I tried it with the shoestring version and it come out tasting like McDonald's fries.

I've done fries like this once or twice, but never went back because I felt like all the extra work didn't equal that much better of a French fry. Worth it to try out, but would never make fries like this very often.

I deep fry in my mild steel wok, only a couple of inches of oil but a large surface area to get heat through the bottom and plenty of head space for any bubbling up to happen without spilling over, the centre gives space for the items to plunge before floating up and out to the sides and plenty of surface area for any moisture from the frying food escape from.

Great recipe. Thanks for sharing it. Would it work just as well to pat dry the potatoes with paper towels after soaking and then put the corn starch in a container, add the potatoes, and then shake them to coat? I love your videos.

I love Nino's home, plus he's got kitties. The sauce kind of reminds me of this beer brats and cheese recipe my ex-roommate found, we made it multiple times for parties. We would always make extra cheese sauce and he would mix Rotel into it and add pasta for a type of Mac and cheese, he would add some ground cooked hamburger as well sometimes. Other suggestions for dipping and cheese, broccoli or other cheese friendly veggies I know a couple people that's the only way though eat broccoli, breadsticks, applied on a burger, chicken tenders, corn dog, Savory Crepes or pancakes, tacos burritos and taquitos, cheese filled bread for a couple ideas.

Who'd have thought French Fries could be so complicated? They are! I have a deep fryer and first time I tried FFs by just dumping in the sliced potatoes. Nope. Takes forever because potatoes have a LOT of water in them. The result was not good. Following Emmy's process works. And: OIL NOTE. Don't throw it away. You can strain out any debris easily and use it many times. Store in it an old oil bottle, or plastic water bottle if you don't have a deep fryer. I change the Peanut Oil in my fryer when it finally gets so dark I can't see thru it. Takes many, many uses, and that includes ANYTHING you fry, chicken, fish, shrimp...anything. In these days of run away food prices, this is one thing you can use over and over. And, when you finally change for new oil, make it 1/3 used oil. It actually makes the oil work better.
This could have been a video for the dipping sauce alone! Love french fries . . . this method has quite a few steps, but if you're having friends & family over it would be worth the work! Thank you Emmy, another great video!👍💛

an interesting variation on the potato that ATK does. they don't do corn starch but rough up the surface of the potatoes some (by tossing them in a bowl) and they bake them instead of frying. same idea and both look amazing.

I do something similar… but I boil the potatoes and then mash them. Then I form them into balls usually but have done fries. Freeze em. Then lightly coat in egg, panko, and deep fry em. Serve with the same cheese sauce but add a little cayenne to spice it up a bit.

Sounds good. I soak my fries in vinegar and water. Dry and shake in corn meal before frying. Makes them crispy. Try cooking in extra virgin olive oil. I will try the cheese sauce. Thanks.
for deep frying? but it has such a low smoke point, how do you manage to deep fry in that?

Would these freeze well after the first low temperature fry? This is to make up a few batches and store in single serving package. I like fries, but having to make fries along with what ever else I am making is a bit more than I can handle in the kitchen without help.

would they have been double crispy crunchy if after the first fry up of the chips...u rolled them in the flour -again- before frying for the second time?
Yukon Golds don’t need to be rinsed for starch. He probably soaks them to soften them a bit.
In Liverpool U.K. we call those Chips, French fries are skinny chip similar to McD’s. Apart from squaring off the potatoes we have made chips this way since I was a little girl. Cheese dipping sauce looks good to go with the “chips” chips & cheese mmmmm 👏👏❤️❤️🇬🇧

I have to be very careful when watching Emmy or I find myself giving in to naughty food cravings. For instance I don't have everything I would need to make the cheese sauce but I do have a jar of queso, I also have a small town burger joint down the rd that makes twice fried French fries so I made sure to sit down with a big bowl of white bean chicken chili I made tonight, a dollop of sour cream & baked chips for scooping. Now I can enjoy the video without my stomach screaming at me.

Have you ever tried making fries using Heston Blumental's method for making 'perfect' fries? I've only ever done it once. And it took me basically all day. But... the results were impeccable. Like clouds encased in glass. The outside was amazingly crunchy, and the interior softer than mashed potatoes. They were amazing. Highly recommended if you don't mind them taking forever to make (because you have to chill them in the freezer between the par-boiling, par-frying, and final frying steps).
Do you think potato starch would work in place of corn starch? We have some corn allergy issues in the family.

My dad would always soak the cut potatoes in ice water for 30 mins. Then drain & patted dry. And he deep fried them twice too. And that was 50 years ago Homemade fries are the best!

U soak em in cold water so the potato DNT change color otherwise potatoes will change 2 a brownish color. Works best if u soak in half tao. Salt or quarter cup white vinegar & the vinegar also adds a slight spicy type bite 2 the potato when cooked.
These look great! Reminds me of the White Spot French fries. I used to work at the facility that made them, and the machines they would go through to cut them is in a similar philosophy of squaring the potatoes but cutting them into slabs, then sticks. And their cut specification is pretty big too.
The corn starch idea is new to me, and almost baffling to add starch after removing some during the soaking process. But there must be something to that.

Used to make this all the time, but I didn't bother with a roux...cheese, milk & voila, yummy cheese sauce for my fries.
