The thing is, you get a bigger piece of this for the carb count, compared to a lot of other desserts. It really satisfies the sweet tooth too. Thank you for the recipe. Because I tend to be a purist by nature, I would never use jello. I have made a similar cheesecake .....I added lime zest, grass fed gelatin (Great lakes is a wonderful brand) and sweetener. No extra nasty ingredients that way. Loving your channel

Hi JoJo👋🏻 Thanks for your comment. I do feel better after losing 100 lbs. However, I do still fall victim to social and societal pressures to look a “certain” way. I have to remind myself often to be kind to ME....I’m over 40 and I’ve had 3 children....plenty of lumps, bumps, and jiggly bits. But, life is a journey and I’m grateful to have a healthy working body, plus a great partner and friend in CJ, who adores me as I was then, and still now. We appreciate your watching and commenting. Made this today. It was about 3/4” thick which seemed kinda thin for cheesecake, but the almond flour crust and cheesecake tasted very good. My wife even liked it. I was pleased with how it turn out. Thanks for the video.

I made this! Had to go to several stores to find the sugar free lime jello, but finally found Kroger brand. I doubled this for a ten inch spring form. I also added a little cinnamon to the crust so it would taste a little more like graham cracker crust. Everyone loved it!
Thanks for the update! We are glad it was a hit. Don’t forget you can swap out the lime flavor for other flavors, hopefully your Kroger’s has additional sugar free flavors. The touch of cinnamon was smart we may try that 👍🏽

I started with the old saccarin (ugh sp?) when it still had bitter after taste unlike its modern version and then Splenda/sucralose in the little packets when it came out. I sure am not recommending. But, unless I use the big bag Splenda with maltitol it doesn't spike my sugars. Everyone has to do what they feel safest with but every other sweetener, even Stevia, causes me tinnitus... really bad tinnitus so I just take my chances. So far, still going strong at this age. Edit: Oh, to answer, I use unflavored gelatin and add flavoring and sweetener to taste. When cold and set it will taste the same as the liquid when just making it so that's a plus. I flavor my puddings the same way making those with milk and eggs cooked on the stove like they did before all the instants in a box that uses corn starch to thicken. There's an advantage to being old as dirt... one of the few... we remember the old cooking. ;-) My Grandma showed me how to make banana pudding and I use the same method for all my puddings.

Normally, it's so sugar laden, so even when non keto/low carb, I rarely indulged. (Of course, INDULGE means half the pie! hahahah! carb/sugar addict, here!). This looks beautiful, as well! I am definitely, DEFINITELY, going to make this one! I also visited your website and have added my email to your subscription. it's a form of "kimmy...", if you see it. Your website is nicely laid out, attractive and didn't take long to load, like so many sites. I can get right to the recipe! Hi just made this cheesecake. Followed it to a T , but the jello sort of has tiny clumps that wouldn’t come out with mixing. And I did mix right away when I added. I am hoping that tomorrow the lumps somehow smooth out. 🤷♀️
Hi Rita👋🏼 Was your cream cheese super soft? I always leave mine out overnight to be sure that it is super soft… If it isn’t sometimes it can have a little tiny lumps in it.

I make that crust all the time. I noticed you had trouble with it sticking to the Pan. A quick squirt of spray cooking oil and it will slide off the pan effortlessly.
No. That’s why we only make this yearly. You could try unflavored gelatin and lime juice and sweetener.....but we have not attempted it. Thanks for watching 😊

You should be able to cut a slice and have it stay down....if you’re having problems, try making the parchment oversized and they remove it like two handles and take the whole cheesecake out for slicing.
Hi Sue. I’ve never used coconut sugar, but if it fits with your lifestyle, by all means use it. My suggestion would be to add the smallest amount, then taste it to see if it’s sweet enough.....you can always add more, but you cannot take away😉

Hi Stephanie. We have not tested it with coconut flour.... Coconut flour is particularly absorbent and sucks up a lot of moisture. Replacing coconut flour for almond flour (or grain flours) requires that you adjust the amount of liquid and eggs added. A good starting point is to substitute 1 cup of almond flour with 1/4 cup (1 ounce) of coconut flour....if it’s too dry, you may need to add more butter.
I would love to make this but I discovered the hard way that sugar free Jell-0 contains maltodextrin which is horrible for Type 2 Diabetes. It spikes blood sugar worse than actual sugar. I wish Jell-0 would find a way to remove it. I am going to experiment with unflavored gelatin, lime extract and some Stevia.
You can use unflavored gelatin and your sweetener of choice, combined with lime juice. We use sugar free products occasionally for our personal lifestyle choices.

Before starting keto I always used that brand key lime juice and the recipe on the bottle. It was always a hit.

Can just use cottage cheese cream cheese and any sugar free jello whipped up with one cup hot water. Refrigerate. Lower fat higher protein version👌

Can you use coconut flour instead?
Hi Stephanie. We have not tested it with coconut flour....
Coconut flour is particularly absorbent and sucks up a lot of moisture. Replacing coconut flour for almond flour (or grain flours) requires that you adjust the amount of liquid and eggs added. A good starting point is to substitute 1 cup of almond flour with 1/4 cup (1 ounce) of coconut flour....if it’s too dry, you may need to add more butter.

I would love to make this but I discovered the hard way that sugar free Jell-0 contains maltodextrin which is horrible for Type 2 Diabetes. It spikes blood sugar worse than actual sugar. I wish Jell-0 would find a way to remove it. I am going to experiment with unflavored gelatin, lime extract and some Stevia.

You can use unflavored gelatin and your sweetener of choice, combined with lime juice. We use sugar free products occasionally for our personal lifestyle choices.
