When i lived in Naples Florida in a previous century lol! I made a few thousand key lime pies. Never thought of combining it with a cheesecake. Will have to give this one a whirl, thanks Sweets!

I just realized that in my neck of the woods, this delicious cake would cost me about $15-$20. The cream cheese alone is almost $4 each.😳😣 These are the times I wish smell-o-vision was a real thing. 😆 Any chance you could do a series on delicious desserts on the cheap? That would be excellent. I've tried almost every store brand cream cheese with good success. LIDL brand is my next trial. I have their full fat cream cheese in my fridge right now for my next cheesecake. It cost $1.89 for each 8 oz bar but since I live in NY (Long Island) that's a great price.

Thanks so much for this and all your other wonderful videos! So I have made this twice now and it seems to have failed both times. The first time, it ended up looking like cheese toast on the top, a big dark bubble which resulted in a sort of skin. Still tasted good, but definitely not proper cheesecake. Just pulled the second one out of the oven half an hour ago and it looks better, but the center seems to have sunken and left a ring along the outside. Seemed like it was set based on the jiggle test, but this is only my second cheesecake so who knows. Any ideas what could have went wrong? Again, thanks for the wonderful videos! So glad I found your channel!
Happy to have you here, Matt! My first thought is could you be overbeating the batter? That could cause the top to rise and could also cause it to brown much quicker resulting in the appearance that you are describing. Another issue could be if your oven is running hotter than it says it is. Lastly make sure you are baking in the center rack of the oven as baking too close to the heating element can also cause what you described with your first cheesecake. I really hope that helps!

The second one, I did in a stand mixer versus a hand mixer and basically just beat it till it was smooth and nothing else. In the batter I added 25% goats cheese. The whipped cream I infused habaneros and raspberry. The batter was overwhipped though and runny. Cake baked fine but had a crack.
Regular limes do work in a pinch; BUT, not near as tasty as the full flavor of the key limes. I’ve had to make it that way for an occasion. Not a wow; mostly too sweet tasting.
I appreciate a chef/cook who actually eats the final product. Yum! 😋

Use the Neufchatel cheese at Lidl or Trader Joe's, it is less than $1.50 for 8 ounces and is very similar to cream cheese.
