Linda Segraves I’ll see what I can come up with for you. I’m thinking- leave out the garlic, use white balsamic and switch out the Dijon with 1 Tablespoon mayo. Pulse and taste. Then add some dehydrated strawberries, maybe 1/4 cup and pulse until they are no longer chunky. The ones I found were sliced really thin. The strawberries will help to emulsify it. Of course use the same amount of olive oil and shallot, S&P. I didn’t test this, but the ratios are the same.
Ms Phyllis, I agree with everything you said but the mayonnaise. If mayonnaise is in anything I eat I can taste it. I like mayonnaise but not sure in this dressing. I ask you because I thought you may have had Strawberry Dressing or knew someone who makes it. Please don't go through to much trouble but I do wish I knew how to make this dressing.
Yum! I'm not sure how I missed this in February, but I'm glad I found it now. I LOVE balsamic vinegar, and I can't wait to fix this dressing. I think it would even be good on asparagus. My hubby complains at restaurants that their dressing is not as good as this! You can also use different vinegars. You can add herbs but the dressing doesn't last as long.
You can't leave the olive oil out, but you could substitute another type of oil. If there were no oil in it, the dressing wouldn't stick to your greens and the vinegar flavor would be too strong.
Plus EVOO is one of the best sources for those essential fats. Those fats are responsible for delivering all the nutrients throughout your body. 1 TBSP has 12g of unsaturated essential fat. That's 108 calories. You need about 600 calories (66g) of essential fat daily for 1800 caloric daily intake. You want to limit saturated to 11g or less.

Absolutely in love with this salad dressings!!!! Ever since I tried it, I include salad in my diet every week.

A little crumbled goat cheese or grated Gruyere cheese would be wonderful in that salad, too!

What if you don’t like Dijon mustard ?
You can use regular yellow mustard or even mayonnaise. It adds flavor, but it also serves to thicken the dressing.
