  • Firefly's Garlic Mushroom Soup
    This is my version of a dish I often enjoyed at Firefly in DuPont Circle, Washington, DC. It is a light and elegant clear soup, well suited to a full-course meal or, less formally, as an accompaniment to a salad or sandwich. In addition to all the reputed health benefits of garlic and mushrooms, this soup has an exceptionally broad appeal, being kosher, vegan, low calorie, and free of both fat and carbohydrates. In fact, just about the only thing this soup does not have to offer is low sodium. Each serving contains approximately 2,000 mg of sodium, which - though still in the safe range for most people - might exhaust your daily allowance.
    Ingredients:
    6 - 8 small white button mushrooms, wedged
    1 small fist (bulb) of garlic, peeled
    1 Telma brand beef flavor stock cube (sold at Walmart)
    2 cups water
    Procedure:
    Dissolve Telma cube in a pot with 2 cups of water and cook on medium heat.
    Peel garlic by placing the whole fist of garlic into a metal bowl and inverting another similarly sized metal bowl over it to make a sphere. Shake vigorously for 20 seconds. Slice off the tough root ends. Add 3 - 4 cloves per serving to broth.
    Clean mushrooms by brushing away any loose dirt and slice off the ragged stem ends. Cut the mushrooms from the top down into wedges - small mushrooms into 4 wedges, larger mushrooms into 6 or 8. Add to broth.
    Bring soup to a boil, reduce heat and simmer for 10 minutes. Serves 2 - 3.
    Comments:
    Like all my recipes, this one can be readily adapted to individual tastes. If you’re crazy about mushrooms, feel free to add more, or experiment with different varieties; same for the garlic. Try tossing in a handful of pearl barley for a more substantial soup. The only change I would not advise is the brand of bouillon. So play with the recipe and have some fun - Sue.

    My daughter wanted me to live with her. I did for 10 years and helped raise my grandkids, hot up at 5:30am everyday, got them up and fed and made sure they washed and did teeth, walked them to the bus and later met them and walked them home. Made sure school work was done. Did the shopping, made dinner kept the kitchen. Was a live in nanny. Now I live alone on senior Apts with my service dog. There's garden plots, handicraft groups. I walk my dog , I ride my bike, I don't have to see anyone if I don't want to. I go stay with my daughter and the kids every couple weeks for a weekend. No TV, I paint. I quite enjoy my own time and my own rhythm of life🎉

      It's what we do for our kids...if our kids appreciate us. Nothing else is required...I dont consider it a chore! So many are envious at the time we grandparents get to spend with our grandkids. Some don't even see theirs...well done you. You thought the same as me.❤

      Good for you! It took me years to adjust to living alone - mostly because my life had always been so crowded in the past. But one day I woke up and realized I wasn't alone - I was free. 😊😊

    Without TV for more than a decade and I do not miss it - I live in NYC and I have sensory overload as it it. Had I kept television I would not have found you or Audie.

      @suemeonyoutube I don't blame you, Sue! I'm originally from NY/NJ, retired to DE. The years that I commuted to L.I.U. in Brooklyn were crazy (crowds & noise 24/7). When I got off the bus that brought me home each day & I smelled the grass, it was bliss.

      @dy9278 Oh, the city was beautiful in the 90s. As much as I disliked the noise & crowds, it was safe & it was clean. I never feared the subway or the shops. Rarely saw a homeless person.

    Right there with you on the nixing of the boob tube, Sue. Don't miss it. Grew up in a boondock household of readers. Nearest library was 25 miles away, so every other Friday evening or Saturday morning my folks would round us up and we'd hit a nearby used bookstore and come home loaded for bear. Oh do those weekends hold some of the best memories of my childhood.

    I'm with you Sue. After a very busy work life and raising 3 children on my own, I do enjoy my single life now and I work from home. I speak to other humans once a day so that's enough for me. The only downside is my grandchildren live far away and I would love to give them a hug at least once a week. The upside is the internet. There is so much to learn and see especially cat videos 🐱🐱

    I am a lot like you in regards to my own space. Lived alone before marriage, sadly lost him too soon. With this being said I still enjoy living alone. I love people and I love my solitude. I have the best of both worlds, in my opinion. My favorite RUclips channels have replaced my tv and I can watch whenever and wherever I want. Hope everyone has a great day 😊

    Soup is my go-to-dish when I'm low on energy and can't make myself cook properly. And I love soup during heatwaves because it takes little time on the stove, producing little extra heat and containing copious amounts of fluid.
    And yes, no television tends to stretch the hours in a day. I hardly watch streaming services, but I do watch a lot of RUclips. Want to cut back on that a bit and only keep what is truly interesting.

    I stopped watching Television 4 years ago when I discovered RUclips. I can watch cooking, gardening, travel and fashion shows and, most of all, the Royal videos when I want and on my schedule. I do not miss mainstream tv and could get rid of the television except my husband still watches local news and weather and he likes the old western shows. And we do watch Traveling Robert Video's while having our 5 O'clock drink on the tv mainly because the screen is larger. I have enjoyed your videos for the past year and always look forward the latest one.

      I agree, I watch RUclips almost exclusively anymore. My husband dominates the tv in my house and all that is ever on are news programs, or old tv westerns or WWII movies 😅

    My tips for a slowed down life..
    If you have a few bills to pay or official things to do, save them up and deal with in one go for maybe an hour or so all on one day rather than a bit everyday.
    Keep off social media everyday, just check in once a week.
    Unless it's urgent don't feel the need to answer emails straight away, or even check emails every day, likewise phone calls.
    Remember, these devices are there for Your convenience.
    If you have a project that is niggling, a house repair for instance, ask yourself if you are realistically going to do it within the next few days, if not, forget about it till then.
    And most importantly, remember, other peoples lack of organisation does not make it an emergency on your part.
    Set your boundaries.
    Throw out or donate everything you haven't used or have forgotten about.
    Don't watch the news everyday.
    And yes..get rid of the TV or use just for family viewing or films.

    After my mom passed, we were going through some of her cook books and I asked my brother for my mom's delicious vegetable soup. He laughed and told me the recipe: boxed chicken broth, can of mixed vegetables, and any leftovers in the refrigerator (meats or cooked veggies). We had a hearty laugh. I still use this same recipe for my vegetable soup. Simple and very fast. Edited to add that I put all the veggies in a small crockpot and simmer for about 2 hours.😃

    I remember as a kid waiting for the newest episode of Pokémon, My Little Pony, or Winx Club to come on TV and it would be the highlight of my primary school week. My family doesn’t watch much cable TV anymore. When I’m doing homework or playing games, I’ll have Spotify or RUclips open in the background and listening to a video or music. Plus my family has Netflix and Disney, so there’s no need to really even go to a movie theatre anymore either. My mom talks all the time about canceling the regular tv because she watches RUclips all the the time.

    I remember rushing home from school to see Peyton Place and Dark Shadows…
    My parents limited our evening television as some of us had bedtimes beginning at 6:30, 7:30, 8:30 and 9:00 respectively to ages of course
    Tv has become (since becoming a widow in 2009) background noise when I tire of the radio or cd, especially after working 12hours.
    At this point I don’t have a computer, just a phone and tablet but the internet is so spotty in the mountains, I rarely get to use my tablet
    Above mentioned previously, time is precious; it is important to give ourselves time

    I have a TV but only use it for RUclips, on the rare occasion I have time to sit down. Never been big on watching TV, there's always so much to do!!
    I started working at a small law firm a couple years ago and always make a crockpot of soup once a week during fall/winter/spring. It's not an expensive thing to do, served with some sort of bread, and everyone LOVES IT!! Boosts morale!! Anything to help hold the winter blues away!!

    Now battling liver and kidney issues at only 53, I was living an insanely stressful life for years before. So now I’m working on starting up a sewing and alterations business-something I’ve wanted to do for decades.
    I remarried two years ago. I love my husband dearly. But I do miss the quiet and independence I had all those divorced years.
    So I treasure the time I have that’s my alone time and I guard it fiercely. If I find myself alone again, I won’t ever live with anyone but a cat again🥰
    PS. I LOVE a big mug of soup I make from scratch!

    I retired early, at 55yo, as an educator to move in and care for my mother. She passed 4 years ago. I miss her but am enjoying my single life doing whatever whenever. I have a TV but seldom turn it on. I read or watch RUclips and Patreon. I enjoy your scarves. My mother and I both wore scarves: tied, ringed or pinned.

    I wanted to mention soup yesterday but got sidetracked. Every winter, I make Dad's chili, his navy beans with ham and Mom's chunky potato soup with rivels They might be similar to spaetzle. Top with butter.
    I also sew quilt blocks by hand--it's more relaxing to me than using my sewing machine. Kitty kisses to Audie.

    Good morning Sue and Audie! I wish I had control over my own life 🤣 I mean I do to an extent but I sometimes dream of running away. Now that the weather is getting warmer I can go outside more and do my little projects like drilling glass plates, or painting, or going through bags of old jewelry. I enjoy these things that I can just take my own time and decompress and be mindless for a while. ❤

    I can totally relate to your joy of living on your own with cats only. I thought I was a bit weird because any group more than 4 people is too much for me sometimes. I’m busy and love my little home and don’t watch ‘TV’ except RUclips. I used to always have cats but sadly not now although I share the neighbour’s. I tell people when they ask if I get lonely, I have a cat personality, sometimes need to chat so I seek someone out, when I’ve had enough, I leave; I don’t like or need to be touched, stroked or hugged very often so don’t do it unless I invite you to; and I just know when there is someone I don’t want to be around! Since retiring, I don’t stress about packing as much into a day as possible, although I’m often busy with projects. But I just sit sometimes, listen to the birds singing and enjoy the peace. We need to treasure every day. I love your beautiful videos at the end. Thank you Sue 🙂

    Do you remember the little video that came on the tv saying "It's ten o'clock Do you know where your children are?" The tv stations signing off at midnight? The jet plane flying through the sky while a poem was recited and the screen turned to "snow"?? We had three channels plus the public education channel 9. No tv until after dinner, and bed time beginning at 8, depending on your age. I hated going to bed at 8 at night and the sunshine was still so bright.

    Hiya Sue, soup is magic! I love making homemade soup as often as possible. Just an FYI, your soup would need to switch out the beef bouillon for veg bouillon to be vegan. Sounds delish as I only make vegetarian/vegan soup, will try my own spin on it. Baking breads/savoury type pies are the only kind of baking I like, quite easy for me. I used to bake bread every week for over 20 yrs, even while having/working a full time biz. Later, still w/ biz & bringing kiddo w/ me, up until maybe 13 yrs ago when things got too crazy.     Great soup recipe! I use dried porcini mushrooms that I've gathered myself. Drying produces an amazing umami flavor. Onion, carrot chunks, porcini, water. Simmer with stock cubes to taste. Strain and discard all the solids. The remaining soup is wonderful in cold weather, clearing the sinuses and any niggles in the throat.

    I haven't completely ditched the TV, but I've pretty much settled on one crime channel! I can listen to whatever case they're solving and still do whatever I need to do--if I have the energy, which is a big "if" considering there's still a load of laundry in the washer since Sunday! (I know, I'll just have to run it through another cycle before I deal with it now.) I've figured out how to get rid of one major stress...I leave my phone in the bedroom on Sunday, so I'm not constantly checking the time or peeking at Facebook or watching RUclips videos! I get more reading done on Sundays now! Give Audie a cuddle for me!

    My dog fell in love with out first grandchild in a stroller so he loves them all but wants the little ones in strollers to come visit. My dog doesn’t understand parents who see us as strangers. 😢☺️❤️

    Hi Sue, I think you and I are sisters separated at birth, I can't believe how similar we are. However, I think I may have said this before, and although I don't wish to put a damper on things, I have to say that for some of us who are not fortunate enough to enjoy good health, what a difference it makes as we get older. Just a few years ago, I had a car and was very independent, but due to ill health, I have had to give up my car and I'm now mainly housebound. The only message I wish to give is please enjoy your life while you can and I also wish good health and happiness to you and your friends and family. PS. many thanks for showing me how to use a scarf ring. I honestly didn't know you thread the scarf through both ends. Now I know this, my scarf rings should stop slipping down.

    I stopped my internet service over a month ago and haven't missed it at all. I got tired of paying $138 every month for fire tv service that constantly buffered because they would say I used all my data in just the first week. And all I ever watched was You Tube. I was told I could get a tv adapter and 15 foot cable for around $70 so I could stream my phone Free! My neighbor has one. But for now, I' satisfied just using my cell phone. I hVen't missed tv at all! 😃

    I couldn't live without my tv not because I watch soaps but I do like old movie channel avoid reality tv my pet hate. But need tv for my dvd player I like old show boxset. I only have a tablet which is ok for YT but find watching too much on tablet like a movie gives me migraines. I do switch off though only watch tv when its something I want to watch and not for sake of it, I enjoy listening to music and crafting helps me relax. I was an only child growing up so always been happy with my own company. I have never lived alone but always taken my alone time.

    Hi Sue, yes, love my scarf ring - learnt it in my early 20's and often use any ring, often makes a plain outfit stylish.
    As to living alone, I would not have it any other way. The best ever. Agree 30000%
    Thanks for the soup recipe, living in another country, we obviously do not have bullion, can I use normal stock cube?

    Dear Sue & Audie good evening. Animals do find children amusing & Audie has high hopes. Yes baking bread is cathartic. But I haven't done so since my children were young. I've slowed down years ago not by choice but by health challenge. When the pandemic lockdown happened was accustomed to home life & had you to watch.
    I do see the advantage of being alone on my own for choices, a plus. Haven't watched scheduled TV shows for 15 years or so after dvr to watch later then fed up with Hollywood. Now watch online things on my TV as bigger screen than my ph no computer, tablet or laptop. Laptops have replaced TV. I think online screen time may be greater for children & adults than the TV was. Most people i know watch TV for sports not regular TV watching anymore.
    I do like mushroom soup. I will say reminds me of French onion soup which my baby sister probably makes the best I've had even in France. ( haven't had her cooking though for well over 10 years). Great slideshow. Have a wonderful week.

    IMO, too much TV and other devices are as detrimental as grains and most other carbohydrates, including ultra processed foods in that it's easier to eliminate than consume in moderation when attempting to moderate everything. I don't trust semaglutide as a carb curbing health solution and, instead I no longer eat carbs. Like any other addiction, if you stop eating carbs, you no longer crave them and it makes it easier to moderate the other life additions such as TV and other devices. I notice I'm not filling in the eliminared unhealthy food gaps with more devices and not having to focus on not eating unhealthy foods makes me feel as if my life is less cluttered and more inclined to make it to the gym and go out for walks. Could also be that I have more energy and better focus because I've eliminated carbs. Or not, but it's definitely easier since eliminating carbs. I'm not trying to hijack the conversation, but pointing out a relationship I've noticed for me. Thank you very much for your videos.
