    Yousef, I cooked this dish today, and it was absolutely delicious! It reminded me of a dish my family in egypt cooked for me a long time ago, it made me very nostalgic. Thank you so much for this recipe!

    All of your dishes are absolutely beautiful. What basic persian spices and herbs should one keep at home, Mr Yousuf?

      Saffron, turmeric, cumin, sumac, cardamon, cinnamon are common for spices. Mint, terragon, dill, coriander for the herbs...hmmm, what am i forgetting?

    Another phenomenal recipe! Thank you Ostaad! 💙💙💙 I will make this over the weekend. If I may suggest, I believe this is more of a casserole than a stew but then again just a suggestion 😊 I think you could put it in oven with Pyrex to get a little toasting on top of the veggies. Probably 15 minutes in broiler and it will caramelize the top and give it more of that sweet Persian flavor many love.

      It’s a converted bbq grill that I made into a gas mangal. I suggest getting a charcoal mangal because they are easy to find

    This looks delicious, I’ve never had this dish before, and I plan on making it some time soon. I love kadoo and bademjan on their own and this combo is sure to be amazing.

    I love Persian food - although with all the saffron it can get very expensive!

      Just mix the saffron with water, you need only a little for it to work :)

    Hell o in lraq we make it a little bit diffrent called grazy and wisdom
    Without saffrin and potato
    Egg plant is the grazy other is wise
    Thing yuo for all dishes you prepar
