    Welcome to Minivan Camper Gal! I'm Kelly and I camp and travel in a Chrysler Pacifica Minivan, doing part-time van life. Here you will find van build videos, tips on the digital nomad lifestyle, general travel vlog videos, and more. I'm into minimalism, and I eat a mostly plant-based vegan diet. I'm still learning how to do vegan vanlife well! I have some great vegan camping recipes to share with you, but would love some suggestions, too!     Though I'm just getting close to purchasing my first minivan...I'm already feeling a long lost, but familiar, antsy and ready to go, my feet are itchin'. I'm just grateful the good Lord led me down an old, yet still familiar, path. Though it's been 43 years since I was a counselor in a rustic camping situation, I know I'm gonna love it. I used to drive OTR semi years ago too, so I have a good idea of what life going where I want is gonna be like at 66....tryin to prep for issues I haven't considered, so I'm enjoying what I've seen here so far. Thanks for sharing.

    Those diesel heaters are awsom especialy when the power is out - i burn wood for the most part and when the wood heat dies down while im sleeping electric heaters come on -
    Living in a rural area there are frequent power outage - during those times i use one of those diesel parking heaters - they do require a 12 volt battery - also a means to charge the battery -
    For those that require the grid to stay warm they might consider looking into a diesel parking heater for back up heat -
    Far more people die from cold weather exposure compared to hot weaher exposure -

    Hi Kelly.. just came across your thread. Great info. If I can...I'd recommend a solid tint on the side doors and back windows half way up. It really provides a lot more privacy.

    Ive had a ridge monkey for a couple of years.and I didn't know you could take it apart like that! That changes everything bcuz it was kind of awkward the way i used it. And im definitely going to make McDonald's apple pie in the fire next! Thanks for a great video! Live your van

    Wow you're a wood carver too. This picture is actually one of my wood carvings. I've been carving for 10 years now. Started carving gnome houses in Cottonwood bark and now carve caricatures in Basswood. The Caricature Carver's of America have seminars and classes which are fantastic. I'm fortunate to live near one of them who has weekly wood carving at his place. Enjoy wood carving, Tom.

    My first carving was The Ole Sea Captain. I have done some 5 minute wizards.
    I haven't painted any of them.

    When I use a pie iron over a fire I use biscuits, butter each side of the pie iron, spread the biscuit on each side fill will pie mixture and put on the fire. Flipping it a couple of times. I also make pizza hot pockets, ham & cheese.
    I don’t have a diesel heater though what a do have is a low temp down sleeping bag, down blanket, down camp slippers, sleeping bag liner, and another throw blanket. I stay toasty. If it gets super cold I’ll start my van for a few minutes but that rarely happens.

    I forgot all about oregano and everything bagel seasonings. Meal looks great. Cooking at night on outside fire will attract wildlife in my area.

    I grew up in a rain forest. Deserts hold no appeal. It's fun to think about lots of people being the exact opposite!

      I grew up in the deep South in swamp country - I had worked in the mountain oilfields but like you the desert does not appeal to me at all - mountains and snow are less appealing -
      I was looking for comments on the flexible solar panels that are sold today and how there fairing out and ran across this chanel - I found her to be interesting to watch also women have a different prospective on every thing -
      I have hundreds of books that were written from 1800 to1920 - I found that I liked reading books written by women over books written by men-
      Women often write about cooking and I like reading and watching things on cooking - I

    Mmmmm. It's always kinda like I too am enjoying the food and I've noticed that I am now waiting for you to start nodding that it's really GOOD. 😊 Btw, buckwheat isn't a grain. It's an excellent protein source. It's related to the rhubarb plant so it tastes a little tart (very slightly). You can buy it roasted too but I'm not a fan of the roasted. And once again, thanks for sharing. Also for reminding me that I used to eat buckwheat often and that I should look for it in the country that I am currently in.
    I was having hot chocolate while I watched this video, the winds howling loudly... Quite fitting.
    A question. I thought I heard more cars drive by or something? Did a few cars drive up and then turn around when they saw you were already there?

    Thanks, Kelly, again for bringing us along on your excursion into the mountains. Food looked delicious and from your reactions tasty, too. But my question, would you ever make that Middle Eastern dish again?
    Seemed like alot of completely different recipes just for just one dish. And doing it all on in a van set up kitchen. Even an at home kitchen for that ambitious a meal would have been a complete mess afterwards!(At least in my kitchen anyway). BTW..I conclude your little guy is a gnome wizard. I figure if he can be one, he can be both. And as I recall, you set up your heater in the snow before in much more extreme cold, but that you said this time it was much colder inside your van with it on. I don't get it. And as and afterthought I think I will invest in your two sided monkey gadget. I have a smaller copper one that frustrates me to no end getting it aligned to put back together, and everything sticks to it! Yours looks way easier to actually use. Keep traveling 😊.

    I'd like to recommend cooked kale (including stems). I slice and dice it pretty small and cook it nearly to death. I enjoy it with fatty food. I've read that it helps metabolize fat and protects the veins.
    Since eating a lot of kale and eating high animal fat diet, my nerves have drastically improved. I'm happy to report that my cholesterol panel is fine, also 👍

      About the oil: a quarter cup is 4 oz. 10 mls = 2 teaspoonful.

    Yes oregano is great! Oregano essential oil is also great for sore throats and colds. I'll get some capsules though too!! Love your videos!👍👍

      Cayenne pepper zaps a lot of bacteria too. If you go to PubMed, you will probably find some research studies... I remember having looked into this, but that was at least a decade ago.
