Welcome to Minivan Camper Gal! I'm Kelly and I camp and travel in a Chrysler Pacifica Minivan, doing part-time van life. Here you will find van build videos, tips on the digital nomad lifestyle, general travel vlog videos, and more. I'm into minimalism, and I eat a mostly plant-based vegan diet. I'm still learning how to do vegan vanlife well! I have some great vegan camping recipes to share with you, but would love some suggestions, too! Sometimes I stealth camp in the city, but mostly I like to boondock. Join me and my camper van as we embark on all the car camping adventures!

The main reason that I went all electric was safety. My induction cooker can be set to use only 600w, and it eliminates open flames and carbon monoxide risk. (I thought of this when I saw the big Ridge Monkey on the little camping stove.) Not wanting grease spatter I only boil things; when I start to miss fried and crispy food I'll get a 700w air fryer. I started with a butane stove and it worked great but unlike you I am still a coffee addict, and I got tired of opening windows on freezing mornings to make it safe to boil coffee water. :) Geek note: My inverter is 2000w which is more than my 120a BMS can put out; if I ever replace my battery it will surely be a 200a one like yours. I sized the inverter cables for 200a so a new battery should pop right in. With 200a I can get 2000w from the inverter and I won't have to use such low-power appliances -- not that I mind waiting a few minutes for the little ones to finish the task.
That sounds like a really great simple setup!
what size power source do you have, i was gifted a small jackery, its great for the little things, but not the fridge, and i fear it would suck much power,/ the air fryer is quick, so a quick meal, but Im with the creator, small is necessary, depends on ones diet too we consider. great use of space, I just got an itty bitty ford transit connect, so its minimal, collapsable necessities only, Safe travels everyone.
@@kristinebrousseau8626 My system is assembled from components, a 280ah (supposedly) battery, a 2000w inverter, and a DC/DC charger that charges the battery as I drive. It's a homebrew equivalent of a 1200w or 1500w power bank, with a little more stamina that those power banks before it needs charging. Edit: I just followed an affiliate link and it looks like the Anker SOLIX C1000 (among other good choices I'm sure) could run an induction cooker, and it's about $650.
Oh I so appreciate all of you. As scary as electric sounds, there's no reason more gals shouldn't be HVAC to sustainable engineering journeyWOMEN 🙃 HECK the furnace guys trained me to reset momma's, they got tired of coming out @2a.m., I think w/ a thorough Prof inspection post my "creative attempt @ this. I can do this, thanks for your support! As I plan on Living full time minimalist, but comfort/ease if use necessary items,, ultimate goal is space tho micro, &"experiences are priority through this last chapter of mine🫶 safe travels
Hi Kelly,
You are very space efficient in your mini van. You can stow so many neat things and the batteries and roof top solar panel have given you the freedom to take longer trips if you so desire. You are so creative and have very good problem solving skills. Enjoy your camping trips and stay safe out there. You have done so well and thank you for these wonderful videos.
Steve
Thanks Steve!
Aeropress is the way to go for making coffee on the road, nice video
Great set-up! We need to hear another song with the keyboard.
Hey Aaron! Yeah, I'll have to come up with something again soon!
It's so important to be efficient with our small living spaces! I'm going through my van now and my first "keeper" item after my essential tools was my HomeFi hotspot. It's compact and has made remote go so much more smoothly, especially when I'm traveling or don't want to use insecure public networks. Thanks for the video!
Great video! I'm in the process of going through my little car camper set up as well. Top item not needed was the little egg holder I just had to get lol. Top keeper items -- power source, fans, camp stove, and coffee supplies.
Haha, yeah, I just took that same egg holder to a thrift store too! lol.
Luci now makes a softer light as well. If the plastic deteriorates just cut it off and keep the solar disc for a bright emergency light.
Oh cool. Great idea about just keeping the disc!
I literally paused watching to go and buy a Ridgemonkey XL-I saw the utensils and became all a tingle.😂😂 Also, on the wonder bag, I own two (also from watching you), and they make excellent floor seat cushions in my Sienna when not slow cooking. I have a tatami floor like a Japanese tea room, and they are perfect-and can make chili! ❤😂😂 I Love your videos! 👍 👍 Thank you for all the practical tidbits.
Haha! Good job with the ridgemonkey! Oh, your van sounds awesome with the tatmi floor!
UV umbrella is great-wouldn’t backpack or travel without it. 🌿
Yeah, right?!
I get great ideas from all of your videos, but this one is chock full of wonderful ideas! I also love hearing your thoughts about why something is going or not going! Thanks!
Hey Pioneer Grandma! Glad it was helpful for you. I'm going to be mentioning you in an upcoming video - I loved your recommendation for freeze dried food!
How could I have forgotten my bug zapper?! Visit www.minivancampergal.com to see links to everything!
You are so efficient and so prepared but also minimalist! Wow
JC and I enjoy watching your interesting videos! We got rid of our desk in favor of a comfy seat and pop up table on the back door of the van. You are so creative, adventurous, and always happy! 😊 Thanks for all the great tips and ideas!!!!
Thanks Julie! Wow, that office setup sounds awesome!
Something you might want to look into is mounting your Starlink on your van roof with magnets when stationary. I know people in remote locations living in houses with steel roofs who are using them as a full time solution. You most likely will want a lower powered set of magnets so you can remove the dish when driving.
Hey Vincent! You must've known what I was doing at the exact moment you commented, ha! Check out the video I just posted: ruclips.net/video/HWzLCHPhrm8/видео.html
I do enjoy the aero press for coffee. Real simple to use and easy clean up.
Ooh, good to know... it's on my Christmas list! (Or, Halloween list? Is that a thing??)
I always luv to watch your videos! And I know the feeling of downsizing and getting to organize what stays. If I were you, in your size van with all your gadgets, bed, kitchen, potty, wash basin, I'd probably never be home. And that if at night some kinda wild animal strolls by you can just hole up in your van comfortably and actually sit on your couch, not have to leave for restroom or prepare food outside. One night out camping a bobcat casually made an appearance within tail wagging distance to my Trailblazer. I got so spooked I wouldn't go outside for nothing! After an hour or so trying to sleep I decided to hightail it home (was pretty close to home anyway), and slept comfortably without any wild animals around 😊. I like your spunk to brave the great outdoors, and you definitely go prepared 👍.
Thanks for being such a great fan Joann! Woah, that's scary about the bobcat! Yeah, once you get spooked it's hard to calm down! I hate that.
I actually found the real ridge monkey on Amazon. Same name and I did a comparison to UKs and if I remember right it said UK was were it is from. I have mostly same stuff in my minivan except I do not drink coffee at all. I also kept my one burner stove but I also have a pocket rocket and small folding wood burner stove like the one you have. I have a sawyer water filter and a cnoc bag.
Oh cool! Wow, we really do have all the same stuff, ha!
I use a trangia style alcohol stove instead of a pocket rocket. It’s smaller, more stable (because the pot stand sits closer to the ground) and SILENT. And many different types of fuel can be used (yellow Heet is cheap and easy to acquire).
Great tips and good job paring down to the essentials!
I bought a small George Forman cooker thingy …it’s a pain to clean but not bad…and I have a fire blanket too…and I have a mini rice cooker and a hot water boiler as well. Good ideas…what magnets do you use? I have the portable vac and the sweep brush! LOL!!! 😂 I love the small vac to a quick cleanup and it fits under my seat.. And I have the solar umbrella too…I have much of the same items which comes from watching hours and hours of others and what has worked and if it would work for me..my dilemma is taking a ll the seats out of my ford Explorer and turn it into a bigger deeper space since it cost too much to trade it in for a van although the van is pretty nice and temping …
really interesting, thank you
Thanks for watching Patty!
You should've screwed the brackets to the front edge of the wood. that way the baskets would never fall off of the shelf.
Congratulations!!!🎉 Every time I go camping (which is not often for now) I rearrange my things so that they make the most sense in a small space. I have a hybrid hatchback, and a tent, but I've slept in the car before. Can't wait to see where you'll go next!!👍👍
Thanks for watching!
Thanks for sharing your knowledge. Looking forward to the star link stuff.
Thank you! Just posted it - check it out: ruclips.net/video/HWzLCHPhrm8/видео.html
Trying to remember what I've put on the Free table at RTR... out of sight out of mind... well there was the white clean water hose for starters, I just lug my water containers right to the tap. A 4-pack of butane cartridges ($6 at H-Mart) when I started cooking with electricity. Books. :)
Yeah, you've got me thinking about my water hose! Thanks!
Great video guys great space saving for your van 😊
Thank you!
My luci light has different adjustments so it’s not to bright. I like that it folds up pretty flat
Yeah it definitely has it's good points
Aeropress has been a great addition to my van. Highly recommend.
Thanks for the recommendation!
Aren't you worried about sleeping on top of all that EMF energy? During deep sleep is when our cells repair the days damage. Sleeping over such a thing creates an impossible situation for your body's needs. Please get your hands on an emf meter and check it out. If it's high you can mitigate the damage with emf blockers.
Hello! Good question - as far as I know, batteries don't emit EMF energy, because it's too low frequency. I still sleep like a baby in the van!
So many gadgets…so little space!
Love your Survivor reference (I’m a die-hard fan). Now for a phenomenal yard sale😉
Thanks Becky!
Love the solar cooker
Yes, it's awesome!
Great job but I would say a big yes for the aero press! I too get twitchy when there is too much stuff so I can relate to the desire to purge,
Yeah, as I was dumping grounds out into a bag this morning, I thought, I really wish this was an aeropress!
I mostly use 2 appliances that run on 12v: a HotLogic Mini slow cooker and a 1L kettle to boil water (mostly to make pour over coffee). I do have a duel fuel single burner stove that I haven’t given up on.
Ooh, nice!
Yes i need to set this up but i struggle may watch your videos but id love buddy to help me with it u rock
good luck!
Hi Kelly, thank you! Love your no nonsense essential list! I feel like you should keep your lifts. I have left these behind, only to have a bad night fighting thu " oh, buck it up! You can sleep on a slight angle!"
Funny, I feel like I have thrown out all the other items as well!
Oh, and I wanted to add, I don't think you want to have magnets anywhere near computer or possibly (?) electrical items as that can cause havac on such items, I think. Might just want to double check ; )
Hey Conni! Well, thanks to you, I decided to put them in last minute, and wouldn't you know it, I totally needed them! Ha! Thanks for your wisdom!
So clever. Got heaps of tips started a to buy list 😖
Haha, you sound like me when I started!
I could never give up the stability of my butane stove.
Yeah, I get that. It is definitely easy to use!
I have almost all the same stuff in my minivan that’s funny. I use a broom and just sweep it out the door. No dustpan. Spray bottle with Dr Bonners and water concoctions for spaying the pee thing out. I sometimes use vinegar and water or straight alcohol.
Bear spray and a cop friend gave me pepper spray and I have a whistle not a birdie but I want one.
How did you mount your solar panel? Did I miss a video?
Ha, that's cool! Great minds think alike! Yes, here is my solar video: ruclips.net/video/yqRyOVd2rWk/видео.html
Nice
thanks!
I have the same solar stove. Never used it as it seems so small
It is small, but small in the van is also good! It's always a trade off.
I am a minimalist yes
yay!
I am experiencing with aduction electric heat stove. Efficiency and solar
oh cool!
I wish you put links to many of the items you've showed
Hey Monica! Check out my website - I have everything linked there: www.minivancampergal.com
👍👍👍👍👍👍👍👍
Thank you!
I have the same exact Alpicool fridge. How do you keep it level in the front seat? I was going to take out my front seat but the Dodge dealer said it was a bad idea. I was afraid it would mess up my seat.
It's not level, unfortunately. I keep telling myself that I'm just going to find alternatives for everything that needs refrigeration, lol.
Your link pinned in the comments goes to a site selling mini vans not to your web site. 😮
Oh shoot, thanks, fixed it!
You are very pretty. All due respect.
I need to find buddy to travel with
Check out homesonwheelsalliance.org!
Id love your life if i could drive
Hope you're able to drive again soon!
Does your family get concerned about you out camping alone?
Yeah, I stay in good touch with them though.
@@minivancampergal1554 that's great 👍
Hi there Kel, wow you're so organised. I bought a Ridgemonkey some time ago, but the smaller one, and I still haven't used it. I think they're a great design though, and I wish I'd got the larger one. I wanted to ask how many pairs of earrings you'll be taking along, because that might be an important factor too! 🤩🛻
Hey Marion! I made a decent batch of brownies in mine - it's bigger than it seems. Ha, yeah, I'll have to keep the earrings on rotation, lol!
