Horrible host. This recipe has steps that take some time to cook down like the onions have to sweat out so that it can add a nice sweetness to the spicy dish. This dish usually takes an hour or more to cook.
Too much oil. I would brown the meat first and then set it aside before cooking the rest and them dumping the meat at the end and simmer. My gripe with some Ethiopian food is that it's entirely, and unnecessarily too oily, and the meat is too dry.
