    Important correction! The brine recipe is one TABLESPOON of Baking soda per cup of water, not one teaspoon.

    This was my first time grilling Turkey thighs, but it won't be my last! These things are huge, and so meaty! It's kinda like Poultry's version of a thick juicy steak. And that's the way I ate it, too! With a knife and fork.

      @@RonOnTheGrill bro did them in the smoker. It would only reach 275. Left them on for 4 hours. They were ok but the skin was rubbery and could not eat. Might try again.

      There are a couple of other things you can try if you don’t have a way to get higher temps. First try adding a little baking powder to you rub or seasoning.
      Second, try patting the skin as dry as possible and then letting it sit in the fridge for a while. The fridge dries out the skin which helps it get crispy.
      Finally, try adding some corn starch to your chicken. All of these methods will help you get crispy skin at lower temps. Try the corn starch or baking powder first. Let me know how it goes!

      Hey thanks! ThT brine works in just 30
      minutes. But use a tablespoon per cup. I may have said teaspoon.

      I got on Instacart and did a search for them man, they found a store called Central market that had them. The butcher is probably much easier though. I need one of those too, lol! But yeah man these are a game changer J. My mind is racing man. Thanksgiving is gonna hit different this year!

      @@BackyardSmoke614 yeah man! I already have a turkey breast I’ve been saving. Dry brine that baby, inject it and grill it, add some turkey wings and drums then smoke those thighs skinless? Man listen. Lol!

    I wanted to try this but never had baking soda. I decided to make a brine evolving salt, sugar, garlic and passion fruit juice for my turkey legs. The turkey legs turned out great but I still want to try this idea. Next time I'm at the store I need to pickup some baking soda.

      Good to hear! Yeah it’s pretty cool man. The next time I do it I’m going to experiment with leaving the meat in longer. Up to now I’ve only done 30 minutes. That brine you did sounds good!

      @@RonOnTheGrill Yes it was good. My wife is going through some weird vegan stage but when she came home and checked out the turkey legs she couldn't resist! I even used the passion fruit juice in the rice I made instead of water. Also I'm glad you are happy with your backyard, it look great. When your plants get established and fill out your yard will look even better. Keep on grilling brother!!

      Thanks man! I jumped on Instacart and found them available at Central Market bro. They aren't easy to find around here, but it was worth it! They're huge, man. I can't wait to do some skinless and smoked. Super good bro.

      Thanks! It's a meat tenderizing method Asian cultures use called Velveting. It breaks down the muscle fibers and makes your meat more tender. And it works in only 30 minutes!
