Kagunes/Kakuhou is for ghouls
Quinque is for CGGs
Arata is the kakuja of ayato and touka's father that they used as an armor(it was technically an armor to begin with)
Kakuja is like an evolution, it happens because a ghoul is cannibalizing other ghouls, it causes their rc cells to rise up and their kagune to evolve

He seems to be a pretty big fan and often recognizes voice actors who have appeared in Bleach when they play roles in other anime. Aizen (Sho Hayami) and Grimmjow (Junichi Suwabe) are the characters he points out frequently. Kaneki hasn't eaten a human since Yamori fight. He has only been feasting on ghouls and quinque of investigators as you see here.

Quick spelling note, it's "kakuja" not "kaguya."
Here is whole Kagune stages
1 stage: Normal kagune (it can be tentacles,wings,blades and others)
2 stage: Half/Incomplete kakuja which is achieved trough cannibalism,becuase of RC level in ghouls and humans are different. More ghouls you eat,more you evolve as one and more crazier you become (on this stage,Ghouls Kagune gets berserk type of upgrade,most of time it's visualized as a liquid mass growing around kagune and shaping it in to different shape or growing it larger,in this state Ghoul minds goes crazy)
3 stage: Full Kakuja (This is complete stage of kakuja on which ghoul is basically able to become like a beast,it can be visualized as a huge humanoid monster covered in liquid Kagune mass in shape of armor,or for example huge monster resembling some kind of animals. Also a lot of full kakujas have special properties/abilities) fun fact,that armor on investigator is Aratas and toukas father's full Kakuja form,they just made it in to armor and not a weapon,cuz when that ghoul was alive,his Kakuja was like a armor covering his whole body

Kakuja is a kagune that develops when a ghoul eats other ghouls, if you remember jasons covered his arm and half his face, jasons was incomplete, a completed kakuja typically covers the ENTIRE body in some way.

Season 2 is an alternate timeline from the manga. Only the end of season 2 is close to the manga (not fully)
Kanaki's kagune was destroyed by amon was because of the smoke that were effecting kagune but kaneki was holding his kagune even in the smike. But because of it his kagune was weak therefore amon cut it off easily...
