You are a wonderful chef! That cheese trick was something I saw on the Epicurious episode that you were on, and thought it was brilliant. I've been doing it with all of my burritos since. Incredible!
Mix 3 cups of flour and 2 teaspoons of salt. Add 1/4 cup of lard (soft, but not melted), food process it or knead it with your hands. Add 1 cup of warm water a bit at a time to gauge consistency (shouldn't be sticky) and let the dough rest for 30 minutes. Heat a cast iron, non stick pan, or comal on medium high, form tortilla balls from the dough, flour the dough ball and roll it out to fit your pan, and cook the first side for 30 seconds, flip it over and cook for 1 minute, then flip again and cook for another 30-45 seconds. To keep them from hardening after you cook them, put them in a towel lined tortilla warmer or put them on a plate and cover with a towel and aluminum foil over the towel. This works for me every time. Also, try Simply Mama Cooks' channel and just omit the baking powder. Hers are a bit thick though. Good luck to you. ✌🏾😊

Como que te entendi "vegetable fat" pero no se. No tiene la receta completa con las medidas? La tortilla se veia bien suavesita y me gustaria hacer mis propias tortilllas

Rice is cheap filler. If you want to save money on getting filled up; use rice.
It's starch on starch, just unnecessary filler. Potatoes sometimes, but still starch on starch and that's not even traditional.
