  • A Day in the Life of a Japanese Wagyu Butcher Shop Owner in Tokyo. This Japanese Butcher living in Tokyo Japan offers premium A5 Japanese wagyu beef, Japanese pork, Japanese chicken and various curated meats. This is an average day living in Tokyo as well as average day working in tokyo as a meat butcher. You'll get a glimpse into Japan work culture for this field. Teru, 44 years old, runs a local Japanese meat butcher shop in Tokyo, Yanagiya, which has been in his family for 73 years. It’s named after his family, Yanagi. Yanagiya only sells A5 Sendai Gyu Beef, which is famous for having a strict grading criteria for it’s meat, as only 30 % of the cows in Miyagi prefecture are good enough to be certified with premium A5 medal. All Japanese beef is considered wagyu beef, but not all Wagyu beef is A5 grade. A5 wagyu beef is the highest quality of meat you can get in Japan based on it’s beef grading system. Basically, you have Yield Grade and a Quality Grade, hence A AND 5. The Yield Grade, is the amount of meat you can get from the cow, and is graded either A, B or C, A being the highest mark. While the Quality grade, depends on 4 categories, marbling, color & brightness, firmness and texture, and finally color, luster and quality of fat. Each is graded from 1 being poor all the way to 5 excellent. In order to achieve an overall 5 grade, the meat must receive a 5 in every category. So Receiving all 5’s but 1 4 in a category, won’t cut and it’d result in an overall grade of 4. If you look closely at the Wagyu beef, you can see what the Japanese call Sashi, or in English the marbling or thin stips of fat in the beef. Without this excellent marbling, the meat wouldn’t be considered grade 5 quality.

      Yeah, I can imagine the coordination that goes into this kind project is pretty serious. Way to go for adapting your process and making it work despite the additional complications. Semi-related question about your video-making process, Paolo...do you storyboard everything out first, before filming? Your shots seem too perfect in each scene to have ‘just happened’.       Well he's a luxury meat butcher. Normal people don't eat A5 wagyu for a weekday night shabu shabu. The area he serves must be a high-end residential area and those unassuming customers are actually very rich people. And from the volume he sells each day this place must be ridiculously profitable. I'm pretty sure lesser butcher shops in Japan serving regular people don't look as fancy and stylish, but maybe just as clean.

    This is the most meticulous butcher shop I have ever seen. Here in North America there are standards too but in Japan, I've noticed throught your vlogs that the cleanliness & sanitation requirements out-do us in every way. There is so much respect there for employers and employees; more appreciative in every way. Teru is an amazing butcher and runs a fantastic business there.

      I don't know much about all the cultural stuff in Japan but in terms of meticulousness, cleanliness and sanitation, these guys are on an absolutely different level, especially in regards to food. That's why adding raw eggs to food over there is... I wouldn't say widespread, cause I'm not sure, but there's definitely recipes and stuff where you do that. For the simple reason that the chain and all processes involved in obtaining said egg and then getting it to consumers is all so safe and sanitary that ultimately, the chance of contracting foodborne illnesses from stuff like raw eggs is, apparently, minimal. I'm just using the example of the egg but it's probably safe to assume it applies to the rest of the food industry.

      Omgsh wow I thought the guy was only in his twenties! But yeah it definitely is the Japanese genetics because I’m in my twenties and am
      25% Japanese and get carded for alcohol 100% of the time and told that I look like a highschooler (And sometimes the shopkeepers Will even accuse me of having a fake ID because they don’t believe how old I am!) but also all of my family on the Japanese side all seem to never age. People think my aunt & mother are my sisters and before my grandmama passed away (rip 😢 miss my oba..) people thought she was our mother.

      Yeah, same. I love that their parent (seems to be their parent?) is right there but is just encouraging good, polite and confident behaviours like that. Working in retail myself it is super refreshing when a really nice kid like that comes in and we can communicate really well. I can tell they've had a good upbringing.       The employers/owners are usually hands-on for most small-to-medium scale Asian businesses, especially those with a reputation such as this. Also, the Japanese are meticulous when it comes to generational businesses as it's all about the family history/honor. And that's how their businesses survive for generations.

    I absolutely love that my son is a butcher at a small, local meat store. He brings home the best proteins I have ever eaten. 100% approve of his current career choice. We don't get A5 Wagyu, but the grass fed prime around here is darn good eating.

    As a licenced butcher salesman from germany, I know how hard this job is, as a butcher you are constantly swinging your knife into some meet. and the cleaning is done every singel time you do nothing else. Hygiene is key for a good store and constant customer flow.

    Is no one going to talk about the fact that he only threw away one garbage bag? Here in the states, trash from food, grocery, and restaurants easily throw out 10+ bags. Because of the price to throw trash way, Tokyo citizens are more inclined to limit their trash, thats actually really cool to me

You are extremely lucky if you get on a clean train or a bus here and a road without traffic here is a dream that will never come true. They somehow manage to make it a four lane road even if the road is a two lane road for gods sake.

    I travel a lot and I think my next destination is going to be Japan.I'm facinated with life of those people, and I want to take a closer look.They live simply, but yet amazing life.When he took the meat and started delivering by foot I was stunned, people in most countries would seat in a car and drive around.When is far away it's ok.But above it all the respect among people.

    I start feeling tired few hours into an 8 hour shift and I live alone.
    This dude has a family, runs his own business and greets people with a smile everyday.
    That is a hard worker, seems like such a nice person! I would love to work with him

      @@kali6651 Why? This isn't a scam. It's just a representation of the Country of Japan. There's Wagyu, Craft beer, Japanese temples, Shrines, Ryokans and anime stuff. I've been there and it's so cool. I've been to Tokyo, Takayama, Kanazawa, Osaka, Koya-san and Ancient Capital Kyoto

      @@obamaprism1277 this may be anecdotal, but eastern cultures weigh heavily on family and pride. You don’t see parents being thrown into retirement homes and teenagers kicked out the house at 18 forcing them to fend for themselves. That builds lifelong resentment to parents. From my experience (growing up overseas and in America) I saw the negative effects that this brought upon, on many families and you can just see the dynamics of a nuclear family. But that’s all weighed on how the children are brought up, I think we are both correct to an extent.

      It's doable on a society that has a small business sector that has not been completely taken over by big corporate supermarkets yet, where people earn liveable wages to allow them to pay for quality products and services. This kind of shop won't survive on places where most people can only practically afford the cheapest stuff from big supermarkets.
      Also, he works a lot of hours per day. And i bet that his shop is also open on weekends. Not all people want to do that.

      Those constant 12 hour shifts would kill any normal human being. I wouldn't survive a week like that, and my work is way less physical than this guy's. Just goes to show Japanese work ethics are something else.

    I've actually worked at butcher shop here in Sweden and the cleaning process was the same
    But everything else here is just on another level 🔥
