I noticed that the restaurants that were empty or near empty were too brightly lit. The ones that were full and busy were dimly lit. Looks like a fun area.

The full places were "cafeterias" (we called them like this) and they serve only coffees (Greeks drink coffe also after 21:00) and some drinks. All these people were actually locals, not tourists. Usually tourists go to their hotels at this time, so after 21:00 you see only Greeks around and few tourists. The same happens in my city Chania.
Without giving too much away, away from this touristy area are much more interesting hang-outs and a great student-vibe. Head towards the fortress down Salominos
Hello Gabriel!You must also visit south rethimno: spili village, preveli's monastery and the awesome preveli's beach, plakias beach, big and small triopetra beach and if you want to meet the local culture, just visit a small village like aktounta or vatos during the weekend or earlier and ask where is the "kazani" (the place where they are producing raki, the original alcool of crete). Drink some raki and eat with the local people: gamopilafo, omanites and kohlious buburistus. Taste the real life of Crete! Have a nice stay!
Some restaurants being more crowded is far from random. Some are simply better/nice than others, and the locals know whats up. They'll avoid the ones with a bad reputation and make sure to stick to the places that are known to be good.
Nice! Stay more time next time you come to Crete and make sure you have your international driving licence. Crete is far too big to travel by bus all the time you will miss great places on the way like Festos and Gortyn
On 28th october you will also watch the parade for a national feast on every city of Greece. Try to visit the iland of Gavdos also, but its better to be well informed first on the boat trips, cause its somehow complicated. Another one thing: you can meet a lot of english and german people on the islanf of Crete, even if you go to very small villages as Aktounta and Agalianou (south rethimno), cause they live there permanently. In any case: try to taste the real life of Crete and have fun!
You did great choice Gabriel, I also drink my beer at the Irish club! Downtown is too loud to enjoy a nice cold beer. By the way the guy you said yasas, has the best food in the town!

This is the modern and noisy part of the city. It also has a medieval port and old town where no cars are aloud, very picturesque and romantic, and an old fortress.
Not really enjoying these Crete videos...since Symi....with Victor....the vibe and energy has gone.....think it's time you moved on to a new place......
