I just decided to pick up a couple of bottles for a taste test and went with rum influenced, Balvenie Caribbean Cask and a special edition Hillrock solera Barbados rum cask. I was surprised, the Hillrock won hands down! Exceptional juice and 117.1 proof (oddly specific) It's crazy I found your review because I'm enjoying these at the cabin down the road a bit in maple lake.

I actually enjoyed it quite a bit. It had a very familiar elk flavor and scent that I believed to be a hint of cedar.
This is a small distillery out of NY. Pretty good in my opinion, would make a great gift for a bourbon drinker. Better value out there for sure, price is steep
Chattanooga bourbon is solera aged...they have 1 huge barrel that product is blended in...single barrels are added to big barrel after about a 3rd is dropped down...it supposedly makes a more consistent product...its still aged in a nee oak barrel first for long enough to be a bourbon....

Greg here with some more thoughts……..Should this be labeled a “Bourbon”. I am wondering if this goes into “New Charred Oak”. As for the Whiskey, I still like it, but it is a nerd/geek whiskey. Cheers.
