    Okay, right away I'm blown away by the quality of this video. Very good audio, and you can really see everything Esther is doing. Wrapping the nori looked a lot easier than I thought it would, to be honest. I bet I have everything I need to make this for lunch tomorrow.

    Tried this today 4/3/21, I used TJ's medley rice with soy s., mirin and wasabi. Cooked Shrimp and red pepper. Nori sheets. I had it for lunch. Easy and delicious. Thanks for the video.

    I made the tofu version today and it was so good. We only had okonomiyaki sauce but it tasted great :) I was a bit worried our sheets of nori were too small but the rice was sticky enough for everything to hold in place without the plastic wrap technique. These would be great for a picnic. Thanks for the recipe!

      The plastic wrap is for added security when cutting also is more sanitizing when you want to share half of one with someone.

    Nice video! Ideal for college students, teens, or busy people for a light meal. However, I don't season the rice and use brown rice instead. It's also a good way to get rid of leftovers (as long as they're not too mushy or wet), such as roasted seasoned meat or veggies or stir-fried. I sometimes add shredded carrots, thinly sliced cucumber, or chopped cilantro, for the color and refreshing taste. Basically, you are using rice to replace 2 slices of bread. Kids just love it! However, if you are on a low-carb diet, you should measure the cooked rice and split it into 2 portions.

      Can you meal prep these? Like make 4 or 5 of them and have them in the fridge for a couple days or will it get soggy?

      Timeline - you should used real washi root “it will be expensive but worth it “ instead of the washi horseradish kind. Reason why is I believe you won’t add sugar because the buy add agave instead

      Sure! Refrigeration may dry out the rice a bit and make it a little stiffer, and the tofu may lose a bit of its crispness, but it will otherwise keep just fine for a few days. Don’t cut it until you are ready to eat it; just keep it wrapped tightly in the plastic wrap and bring it out of the fridge at least a half hour before you’re going to eat it if possible to take some of the chill off the rice. Have fun!

    Little Note: Give your cut cabbage slices. It will make the salad tastier and a bit softer.

      I use a mandolin all the time and don't even use the hand guard thingy. In my experience the trick is making confident strokes, committing to the slice:) Oh yeh, and knowing when the piece is too small to continue...haha

      My ex, my sister, my father and I have all ended up in urgent care because of a mandolin! All docs in emergency care say they see mandolin injuries weekly. Many of them! I still use for onions but ONLY with the safety guard! And I leave a good chunk leftover for other uses. Don’t get picky about slicing down to the bottom. Too dangerous!

      Generally packaged nori is already roasted. Many packages also say in English "roasted seaweed"

      I was thinking of using a cheese cloth or thin kitchen towel. Wouldn't cut through it of course, but could at least use it to really tighten the whole thing up. A compostable parchment paper would probably work too if you wanted to cut through it and take it to-go.

    Yum!! The bulgogi one could also be vegetarian friendly if you subbed the ribeye for Soy Curls, I bet that would mimic the thinly sliced beef texture really well. Got to try this, thank you!

      I recommend getting a pair of cut-resistant gloves! You can mandolin with much less concern 🤓 the ones I got are dishwasher safe too! EDIT: I meant “mashine washable” like with my clothes lol. Not dishwasher safe haha
