    The word Shahi means “Royal” and that is exactly what Shahi Paneer is! Shahi Paneer is cooked by slow-cooking paneer in a creamy sauce made with spices, nuts, and cream to give it a rich and decadent flavor.
    Shahi Paneer is credited to have been created in the royal Mughal kitchens and hence the name.
    Shahi Paneer is a luxurious and decadent dish that is often served on special occasions because it is too rich to enjoy daily!

    Recipe :
    Shahi Paneer
    Preparation Time: 15 minutes
    Cooking Time: 25 minutes
    Serves: 3-4
    Ingredients:
    300 g paneer, cubed
    4 tbsp ghee
    4-5 cloves
    5 green cardamoms
    2” cinnamon stick
    3 bay leaves
    1 onion, chopped
    2” ginger
    6-7 garlic
    2-3 green chilies, slit
    1/2 cup heavy cream
    ½ cup cashew nuts
    ½ cup yoghurt, whisked
    ½ tsp garam masala
    ½ tsp cardamom powder
    3 , black cardamoms
    1 tsp black pepper corns
    ½ tsp caraway seeds
    Salt, to taste
    ¼ tsp saffron, soaked
    Method:
    In a pan, take 2 cups water, the sliced onions, ginger, garlic, , black cardamoms, cashew nuts, cardamoms, black pepper corns, cinnamon stick, 2 bay leaves, cover and bring to a boil. Simmer for 15 minutes.
    Remove the bay leaf, black cardamoms, cinnamon stick, cool completely and grind to a fine paste using ½ cup water.
    Pass the mixture through a sieve to get a fine puree.
    Heat the ghee in a pan and add caraway seeds and bay leaf. Fry for a few seconds until fragrant. Add the prepared puree, salt, whisked yoghurt and half the cream, simmer over low heat, stirring continuously, till it comes to a boil.
    Add the paneer cubes and cook for 5-7 minutes until the paneer is soft and coated with the gravy.
    Finish with garam masala, cardamom powder, saffron and serve.
