    My daddy had a starter that was the legacy of his grandmother. It was originally started in 1931 and kept alive through the Great Depression, WWII, Vietnam war, the crazy 1970s of gas shortages and the rise of crazy big hair on the 1980s. I never recall a time he wasn’t making sourdough bread. My dad passed away in June 2023 at the age of 90. The starter passed away when he did. 😢

    Maude, my starter, hangs out in a crockery jar most times. When it's time to call her into action, I take some from Maud's supply, use it to make my sponge, and then feed Maud. She's a little demanding at times and loses control, so when baking isn't happening but pushy Maud is ready, I take all but a little bit scrapings out of the crock. Everything fresh is added in and allowed to hang out on the counter top for a day or two, then it's back to the fridge. I spread the fully ripened starter out on parchment paper and let it dehydrate in my oven with the light on. When it's dry, I put it in a blender and pulse it a few times, put it in a clean jar for storage, and I have an emergency back up starter from the original mother. After six months away from home while having emergency back surgery and then rehabbing from the result of a totally blown disc, it's a good thing I had that. My refrigerator smelled like a brewery from all the hooch from the unused starter that had long since given up the ghost. I also have a book on 'salt-raised bread', that uses a starter made from potatoes and water. 'Salt Rising Bread: Recipes and Heartfelt Stories of a Nearly Lost Appalachian Tradition Recipes and Heartfelt Stories of a Nearly Lost Appalachian Tradition'.

    Bamboo is actually 10 times denser than wood. It's virtually nonporous as well. Love your adorable cotton covers. They remind me of the night caps that Laura and Mary Ingalls wore in Little House on the Prairie!

    I have sourdough bread on my grocery list today. Unfortunately, it is not baked by me, but I don't have enough countertop space to get fancy. Thank you, Heather, for making me hungry now!     Every time I named my starter, it wouldn’t make it 😂 so my sourdough starter doesn’t have a name! I love baker Betty’s sourdough sandwich bread. Her video on it is fantastic!!

    I finally got my kitchenaid scale!! Now to restart my sour dough starter!! Lost mine during an electric event here in December. I'm hoping to catch the new series on sour dough!!

    jars with no rim or lip are the best and i have found them in thrift stores they just don't have the markings but and elastic band works just fine to mark the level

      oh I gotta keep my eyes peeled now! our thrift stores have gotten more expensive than buying new. its insane!

      Heather, do you have St. Vincent de Paul stores around you? They are a Catholic charity type store that people donate to and then their prices are much much lower than some of the others. Lol not naming any names. Around here the workers are all volunteers from the Catholic Church so all the prophet goes to Catholic charities. I love shopping there there’s probably seven or eight of them within a 50 mile radius of me and I love them. I don’t go to any other type of thrift store since I found them.

    I need this! Cleaning my jar that I use for sourdough is the only thing I don’t love about making sourdough bread!

    I love sourdough bread, but for now it is store bought for us until we move. Just not enough space in our tiny kitchen. I already told my family that when I have my bigger kitchen look out! I will be going back to the good ol days of baking!

    Good morning sister! Years ago I made my first loaf of bread thanks to your videos. We have enjoyed bread making ever since. I hadn't ventured into the sour dough yet though because I'm so scared I'll fail. I think I'm going to try today to get my starter going. I'd love to have one of those jars some day.       DO IT!!!!! The only time you fail, is when you dont give something a try. Thats an automatic failure. hahaha if you think about it! It's just water and flour, right? Even if you kill it, you are just losing water and flour!

      @@TheKneadyHomesteader you know, you're right! I have 50 pound bags of flour so it's not a huge loss if it doesn't turn out right. I think I just put so much press on myself and I need to remember that what matters most is just the trying part. As long as I try, thank you for that reminder! 😊

      I followed the kneady homesteaders older video for starting mine and I’ve had mine going for 4 years now. Baking with it today. 4 loaves of bread rising right now and English muffins just finished mixing and set to rise. ❤

      @@survivinglife__unplugged she made it very easy! It was day by day. I wrote it all down so I didn’t need to find each day. Long process but it was easier for me. I’m kinda computer illiterate sometimes.

      I'm good, been really busy .
      Looking so forward to starting my garden planting snap peas next month ,I really miss it so do my grandchildren and chickens-especially the cherry tomatoes lol .I'm so over winter and ready for gardening ,swimming in the pond and riding around in the side by side with my grandchildren lol how about you?

    While you were talking about your bamboo lid & the problem it was for you I had the thought that maybe you could lightly coat it with wax to waterproof it. But the flax cover works good.

      this lid looks like they put a shellack on it.... did I spell that right? hahahaha but the problem is, it doesnt allow the starter to breathe, it slips off, but wav may prevent that, eh?

    Heather I want to do some starter. I live in South Texas and worry about the summer heat for the starter, we don't use air conditioning. It's sometimes gets to 110 in the house. Can I leave it out on my counter in the summer do you refrigerate it or what. This is what has been stopping me from trying to make sourdough for quite awhile 😢🤠
