Our Week of Dinners: 05/13/24 to 05/18/24

Welcome!
We are a homesteading, homeschooling family of 7. Due to recent events (job loss/career change, health issues, rising food costs, etc.) we are having a hard time making ends meet despite our best efforts at frugality. So we are tapping into our local food banks to help us feed our family. Come along as I show you what we are blessed with, what we add to it via grocery store and garden, and how I use it all to nourish our bodies.

Bacon Cheeseburger Casserole

Any Berry Muffins
2 c. Flour
2 tsp. Baking powder
1 tsp salt
1/2 c sugar
1 c milk
1 egg
1/2 c melted butter, oil or applesauce
1 c. Berries, diced fruit, chocolate chips, etc.
Preheat oven to 375'. In a large bowl, stir together dry ingredients. Add wet ingredients and stir until the dry are JUST moistened. Gently stir in add-ins. Spoon into 12 greased or paper lined muffin cups. Bake for 15 to 20 minutes until lightly browned and toothpick comes out clean.
Air Fryer Chicken Nuggets
• Low Carb Chicken Nuggets
Honey Mustard Dressing or Dipping Sauce
1 cup mayo
1/2 cup mustard
1/2 cup honey
1 to 2 tbsp vinegar if desired to make thinner
Mix well and enjoy.

All great fast meals . It’s amazing how fast your chicks are growing. I had some years ago and it’s fun to se how they all turn out looking. They all started yellow. Also to see which ones are roosters or hens . They all had names and had their own chickenalities . LOL Don’t have them anymore. Slowly they got attacked by bears and neighborhood loose dogs.

Oh man. Loosing chickens is no fun. We've had our fair share of dog, coyote, raccoon, fox and bird attacks. We do our best to protect them but those critters sure are cunning.

Have you ever used truvia instead of sugar in the muffins? My husband is diabetic and trying to find recipes that I can substitute out the sugar. Love your videos!

We are usually done by noon with one on one work. Then the older 3 usually have an hour or so of independent work.

Are those silicone muffin liners? How do you like them? I always have the worst luck using the paper liners, wondering if the silicone are worth the investment.

Yes they are. I really like them. They are a bit of a pain to wash but otherwise, I have no complaints. I like that I can bake a lot all at once.

Yes. I try to mix it up with something different. But simple meals also require less brain power and planning. Lol
