We are a homesteading, homeschooling family of 7. Due to recent events (job loss/career change, health issues, rising food costs, etc.) we are having a hard time making ends meet despite our best efforts at frugality. So we are tapping into our local food banks to help us feed our family. Come along as I show you what we are blessed with, what we add to it via grocery store and garden, and how I use it all to nourish our bodies.

Meatballs
1 lb ground meat
1/2 c. bread crumbs, cracker crumbs or ground pork rinds
2 to 4 tbsp milk
2 tbsp minced onion (raw or dried)
1 tsp salt
1/2 tsp worchestershire sauce
1 egg
Mix all well. Form into balls however big you like. Place on a walled cookie sheet or casserole dish. Bake at 400° for 20 to 30 minutes (depending on the size of the meatballs). Use right away or drain off fat and freeze and use just like frozen, store hough meatballs.
Meatball Stroganoff
25 to 30 small meatballs
1 c. broth
2 tsp each- parsley, oregano, basil
1/2 c. sour cream
1/2 c. heavy cream or half and half
salt and pepper to taste
corn starch to thicken if desired
Simmer meatballs, broth and seasonings till meatballs are heated through. Add creams and simmer till desired thickness. Add cornstarch yo thicken if desired.

My family is originally from Iowa and my grandmother canned. My mom didn’t can, with the exception of apple sauce, that I can recall. We moved to NC when I was about 8 years old. I’m still in NC and in the past couple of years have been self teaching myself to can meats and veggies. I unfortunately don’t have the room to grow a garden big enough to home grow all of my canning veggies but I do get them from farmers markets/stands and the food pantry gives out things in bulk quite often.

My family always did homegrown, canned and scratch cooking but they were from rural PA! But it is more my Irish side than my polish side....polish side was amazing cooks but no canning that I know of!

I love getting a chicken from Walmart . Easy lunch prep and ill freeze part too. And a make Broth for my dogs .
Great meals of the week! We all need a rotisseree chicken night once in a while we did that last Thursday love those nights. I made 2 boxes of stuffing, 2 boxes of mac and cheese and frozen normandy vegetables it took me 15 minutes to pull dinner together. I hope you have a very Happy Mothers Day!

Great meals! For meatballs, I always stretch the meat even further with grated carrots and zucchini and onion on top of mixing in meat. It does make the meatballs a little more wetter, but nothing a bit of flour or bread crumbs etc can't fix. You can also add in almost ready rice or orzo to the mix (especially with zucchini) to make what we Aussies call porcupine meatballs
I'm from Indiana & never heard of the buttery hard boiled eggs. But Im gonna try it. Sounds good.
I think my mom put a little butter in her egg salad though, when she made it. Thats a memory you brought back. I had forgotten that. Thanks! Lol

Keto Green Bean Stroganoff
Brown 2 Ibs of ground beef over medium
heat and then drain the fat.
Stir in
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 cup cream cheese
1 cup of heavy whipping cream
2 cans of cut green beans
Turn heat to med-low and top with 1 cup of shredded colby jack cheese. Cover with a lid. Let it cook for a few mins or until the cheese is melted.
Happy Mother's Day to you.. I live in Canada and I have never heard of the smashed boiled egg with butter... I will do that for my hubby though and see if he likes it.. I do not like eggs, myself... Love your channel!

I was also raised on the hard boiled eggs with butter. My daughters and grandchildren all love it too. We used hard boiled eggs in a lot of things. Creamed white gravy with eggs cut up in it over toast or biscuits is a favorite. I’m from Indiana. 😊
My great grandma in Nebraska and grandma in PA both canned. I can a lot of food, too.
I slice a hard-boiled egg in half and put butter on it while it's still warm with a little salt no pepper. I live outside of Peoria Illinois

I have never heard of butter eggs! I do love to fry my egg in butter though so it can't be bad!
