You do what you want to do with your knives, thats fine. But Im not entirely sure this is the best advice to give others. Especially the reprofiling parts, if I held a knife in contact with a bench grinder that long it would be so hot I couldnt hold on to the spine of it. Thats either dangerously close to or way above the temperature needed to mess with the temper of the blade which can happen as low as 200C (392 eagle units). Same with taking an angle grinder or 2" belt sander to it, it can be done but it should be done very carefully with a bucket of water next to it to dip it into maybe every 5 seconds or so depending on how aggressive it is. If you want to use a pullthrough sharpener or an electric one like you showed, thats fine too. But if this is not something you really feel a need to do yourself and you dont have the patience to learn the skill properly, I think its better advice for others to just have a professional do it for 8-12 bucks instead of going through all this.
