Another tip about the onion. If you don’t cut the root end (start cutting from the other side) it doesn’t release that smell. Almost no smell at all. Best trick ever!!

Fantastic idea for a wrap. Thank you Derek! BTW beans and cumin are a super match. You can be very generous with cumin in bean dishes to taste. With that volume I'd comfortably use 2-3 teaspoons. And I'm glad you ignored the haters. Cilantro rocks!

You actually don't have to slice onions horizontally to get them finely chopped. Length-wise once and then the other way is enough. If done correctly (I don't know if you can do it wrong) the layers separate leaving you with only small pieces.

so yummy!!! Been in the kitchen for hours and just needed a bean side. I searched under you and found this one! This is sooo good!! Loveee the molasses in this! I find you both so inspirational! so many great ideas, recipes and techniques! I love putting my twist on a recipe! Today I blanched a huge bag of bok choy for the freezer. Made quinoa, marinated tofu, roasted beets, sweet potatoes, modified your tahini dressing, cashew dressing and then modified this bean recipe.I was vegan for 9 months in 2019 and been vegan again since April 20th, 2023 so, 41 days. And I gotta say there are soo many new and amazing recipes and methods since 2019! Just having a blast in the kitchen! Hubby loves everything I make too! oh and I loveee your e-book!!! Just ordered that a couple of days ago! All the best from Ontario! p.s. my tip: use a fork when you cut the onion in half. I thought this up years ago when the knife slipped on slippery skin and got me really bad.

Refried beans are a traditional Mexican dish. Traditional refried beans are pinto beans in Northern and central Mexico. Black beans are traditional to the Yucatan and Guatemala. Refried beans are mashed with pork lard - never beef fat. You do not make them with a blender. Traditionally they are mashed with a wooden spoon. But for an easier technique use a potato masher as they are cooking. The best refried beans for healthy eating are canned. The canned version does not include any lard. It is usually only 1 ingredient: beans. To make them amazing add a small can of chipotle sauce and mix and cook in a pot for 10 minutes. They will taste amazing!
