Made this for one of the tiers of a baby shower cake, and people loved it!! Thank you. Watch your videos, sometimes over and over to get it right. When you make your wedding cakes, you make them one day, the next cut and fill and crumb, then last day ganache, do I have this right. I'm trying to get better at organizing my time with making bigger cakes. again, thank you so much!!

I love the light airiness of your meringue buttercream, like yourself I personally prefer buttercream as a frosting but I know for some cakes especially themed cakes which have many components and to get a specific look and mild then fondant is better. I also adore mud cakes and the moist and richness of a mud cake. I think most people don't realise just how versatile you can be with flavours when making a mud cake. I have had people often go, how is it a mud cake if not chocolate? But as you know a mud cake is the texture and density not the flavour to which gives it it's iconic name. I love the fresh raspberries and the choices of topping NGOs you used to decorate, I would have white chocolate raspberry balls, some pink and red sugar roses, a few mini meringues, fresh raspberries and white chocolate curls. I love how versatile you can be with a cake and all your recipes, tutorials and videos are truly amazing and inspiring. I love the originality. :)

(maybe I also done it wrong just had my hand mixer at this time and soon after this I ordered my kitchen aid as my birthday gift) do you have any idea how it will turn out if I make the Italian meringue instead? or does it only taste perfect with the Swiss one? excellent video--as an American baker I usually go for lighter cake batters unless it's a carrot cake, but the next birthday cake will definitely be this white chocolate coconut raspberry combo. I am curious though--is mud cake the typical Australian favorite? The only mud cake I've heard of in the US is the typical dense chocolate mud cake baked in a bundt pan. My goodness what have we been missing! BTW do you watch the Great British Bake Off series on the BBC in Australia? So much fun.
+deborah tunnell Mud cakes are the most common cakes in Australia. They sell them at the supermarket as our version of chocolate and caramel cakes. Most of the time if you go to a party, they will have a mud cake. I did watch, so fun!

+mishell Rath Strawberries can spoil faster, so just be careful. You can replace eggs with an egg replacer, or banana, which tastes amazing with the white chocolate, and strawberries would be fab with it. The butter and cream, you can use coconut cream and Nutelex.

How do you keep a butter cake moist if you put it in the fridge? Isn't the butter going to harden again?
