I love that she included a baked potato! The dieting industry is completely screwed up when it comes to whole carbs, potatoes not loaded with butter and cheese are a very nutritious food.
Exactly! Vitamin d, potassium, fibre (with skin on)...gorgeous! Just add a tiny bit of vegan marg or vegan cheese if you feel a need -- fewer calories, no animal fat etc
