Can I double the oil without it affecting the recipe. I like to have more oil because sometimes i just like to drizzle oil on stuff but this recipe looks really good.

Yes you can. You will be able to get more (in quantity) and it will not be as spicy as you will have to use more of it.

Do you preserve the oil? like when you can/preserve jams and sauces?

O R I just put everything from the pan into that jar. However when I do fried garlic I strained the garlic and keep the oil in a separate container.
